Description

This oven-baked chicken and vegetable traybake is a high-protein and gluten-free main course featuring chicken breast fillet, bell peppers, zucchini, and red onion, enhanced with feta cheese. Preparation in the Thermomix® takes a total of 40 minutes, with an active working time of about 20 minutes. This recipe is ideal for student cooking, offering a light and healthy meal and yielding 4 servings. With lactose-free ingredients, it's also suitable for people with lactose intolerance.

Ingredients (12 ingredients)

  • 400 g Chicken breast fillet
  • 2 Stück Bell peppers
  • 1 Stück Zucchini
  • 1 Stück Red onion
  • 50 g Feta
  • 2 Zehen Garlic
  • 2 EL Olive oil
  • 2 EL Lemon juice
  • 1 EL Oregano
  • 1 TL Chopped basil - frozen
  • nach Geschmack Salt
  • nach Geschmack Pepper

Preparation (6 steps)

Chop onion and garlic

Peel and quarter the red onion. Peel the garlic cloves. Place the onion and garlic in the mixing bowl and chop for 3 sec/speed 5. Use the spatula to scrape everything down from the edge.

Prepare marinade

Add 2 tbsp olive oil, 2 tbsp lemon juice, 1 tbsp oregano, 1 tsp chopped basil (frozen), salt, and pepper to the mixing bowl with the onions and garlic and mix for 10 sec/speed 3.

Prepare vegetables and chicken

Preheat the oven to 200 degrees Celsius (top and bottom heat). Cut the chicken breast fillet into bite-sized pieces. Chop the bell peppers and zucchini into small pieces. Place the quartered onion, chicken, peppers, and zucchini on a baking sheet lined with baking paper.

Mix marinade with vegetables and chicken

Pour the marinade from the mixing bowl over the vegetables and chicken on the baking sheet and mix everything well so that everything is evenly coated.

Bake

Place the baking sheet in the preheated oven and bake for 20 minutes.

Add feta

After 20 minutes, remove the baking sheet from the oven, crumble the feta over it, and bake for another 5 minutes until the feta is slightly melted.
