Description

This creamy chicken with coconut milk is a comforting and tasty dish, perfect for a family dinner or with friends. I love preparing this recipe because it is simple and quick to make with the Thermomix®. The chicken, marinated in a mixture of fragrant spices, becomes incredibly tender and juicy. Ingredients (11 ingredients)

  • 1 c à c curry
  • 1 c à c ginger
  • 2 c à s fresh coriander
  • Salt
  • Pepper
  • 20 cl coconut milk
  • 1 piece ripe tomato
  • 1 c à s oil or butter
  • 3 piece shallots
  • 1 clove garlic
  • 3 escalopes chicken

Preparation (6 steps)

Preparation of chicken cutlets

Roughly chop the chicken cutlets. In a bowl, mix the chicken with 1 tsp of curry, 1 tsp of ginger, 2 tbsp of chopped fresh coriander, salt and pepper. Set aside.

Chop the shallots and garlic

Add 1 tbsp of oil or butter to the Thermomix bowl and sauté the shallots and garlic 3 Min./120°C/Stufe 1.

Add the tomato

Cut 1 ripe tomato into small dice and add it to the Thermomix bowl. Program 5 Min./100°C/Stufe 1.

Cook the chicken

Add the marinated chicken to the Thermomix bowl and cook 7 Min./100°C/Stufe 1/Linkslauf, stirring with the spatula.

Add the coconut milk and simmer

30 min/194°F/Speed 1/Linkslauf 90 Reverse

Pour 20 cl of coconut milk into the Thermomix bowl. Salt and pepper lightly. Simmer for 30 Min./90°C/Stufe 1/Linkslauf, until the meat is cooked and well marinated in the coconut sauce.
