This recipe for crispy roast chicken is an absolute classic that is sure to delight on any occasion. I've been making it since I was a kid and it's always a highlight when the family gets together. The secret lies in the buttermilk marinade and the special spice blend that gives the chicken an incomparable flavor. The preparation takes some time, but the result is definitely worth it.   • 4 pound chicken, cut into pieces
  • 1 Tasse buttermilk
  • 2 cups all-purpose flour for coating
  • 1 TL paprika
  • salt
  • pepper
  • 2 quarts vegetable oil for frying

Prepare Chicken

Cut the chicken into pieces and remove the skin if desired. This is a preparatory step that does not take place in the Thermomix.

Make spice mix

Add 2 cups flour, 1 teaspoon paprika, salt and pepper to taste to the mixing bowl and mix for 5 sec./level 4. Transfer the mixture to a large plastic bag.

Bread chicken

First dip the chicken pieces in buttermilk, then add in portions to the plastic bag with the flour mixture. Close the bag and shake well until the chicken is completely covered. This is a preparatory step that does not take place in the Thermomix.

Let the breading soak

Place the breaded chicken on a baking sheet or platter and cover with a clean kitchen towel or wax paper. Wait until the flour breading has a doughy consistency. This is a preparatory step that does not take place in the Thermomix.

Prepare Oil

Fill 2 quarts of vegetable oil in a large pan (preferably cast iron) to about 1/3 to 1/2 and heat very hot. This is a preparatory step that does not take place in the Thermomix.

Fry Chicken

Add as many chicken pieces to the pan as will fit. Fry the chicken in hot oil until golden brown on both sides. This is a preparatory step that does not take place in the Thermomix.

Finish cooking chicken

Once the chicken is browned, reduce the heat and cover the pan. Simmer for 30 minutes (the chicken is then cooked through, but not yet crispy). Remove lid, increase heat again and continue frying until crispy. This is a preparatory step that does not take place in the Thermomix.

Drain and keep warm

Drain the fried chicken on kitchen paper. Depending on how much chicken you have, you may need to fry in several batches. Keep the finished chicken warm in a slightly warm oven while the rest is being prepared. This is a preparatory step that does not take place in the Thermomix.
