Description

This recipe for saddle of venison is a hearty main course, ideal for festive occasions or Sunday family dinners. The saddle of venison is first seared in a pan and then braised in the Thermomix® with vegetables, game stock and red wine. The preparation time is about 2 hours, the working time about 60 minutes. The dish is rich in proteins and is particularly suitable for autumn and winter.

Ingredients (15 ingredients)

  • 1200 g Saddle of venison
  • 2 Stück Carrots
  • 1 Stange Leek
  • 1 Stück Onion
  • 0.25 Stück Celeriac
  • 40 g Clarified butter
  • 100 ml Game stock
  • 100 ml Red wine
  • 2 Stück Juniper berries
  • 1 Stück Bay leaf
  • 1 Zweig Rosemary
  • 100 ml Cream
  • 20 g ice-cold Butter cubes
  • Salt
  • Pepper

Preparation (8 steps)

Prepare vegetables

Clean 2 carrots, 1 leek, 1 onion and 1/4 celeriac and roughly chop. Have the prepared ingredients ready.

Chop vegetables

Put the prepared 2 carrots, 1 leek, 1 onion and 1/4 celeriac into the mixing bowl and chop for 5 sec./speed 5.

Sauté vegetables

Thermomix® Setting
3 min/248°F/Speed 1 248°F

Add 40 g clarified butter to the chopped vegetables in the mixing bowl and sauté for 3 min./120°C/speed 1.

Sear saddle of venison

Season the saddle of venison (approx. 1.2 kg) with salt and pepper. Sear sharply on all sides in a separate pan with clarified butter.

Add saddle of venison and braise

Thermomix® Setting
60 min/212°F/Speed 1 212°F

Place the seared saddle of venison in the mixing bowl on top of the sautéed vegetables. Add 100 ml game stock, 100 ml red wine, 2 juniper berries, 1 bay leaf and 1 sprig of rosemary and braise for 60 min./100°C/speed 1. Leave the measuring cup on.

Prepare sauce

10 sec/Speed 8

Remove the saddle of venison from the mixing bowl and keep warm. Remove the bay leaf and rosemary sprig. Puree the sauce in the mixing bowl for 10 sec./speed 8.

Refine sauce

Thermomix® Setting
3 min/176°F/Speed 2 176°F

Add 100 ml cream and 20 g ice-cold butter cubes to the mixing bowl and stir for 3 min./80°C/speed 2. Season with salt and pepper.
