Description

This leek carpaccio is a fresh and light starter, perfect for sunny days. I love the simplicity of this dish, which highlights the sweetness of the leeks. The touch of balsamic vinegar and red berries bring a tangy and colorful note that awakens the taste buds. It's a recipe I often make in the spring, when the leeks are very tender. Easy to prepare and visually appealing, it is ideal for a light lunch or an elegant dinner. Feel free to vary the herbs according to your taste!

  • 4 piece Leek(s)
  • Red berry(ies)
  • 4 c Basil
  • 2 c. à soupe Olive oil
  • 4 c. à soupe Balsamic vinegar
  • Flower of salt
  • Mill pepper

Prepare leeks

Thermomix® Setting

Cut off the base of the 4 leeks and tie them together into a bundle with kitchen twine. Fill a large pot with salted water and bring to a boil. Place the leek bundle in the steamer basket and insert into the mixing bowl. Add 1000 ml water to the mixing bowl.

Cool leeks

After the cooking time, remove the leeks from the steamer basket and rinse under cold water. Remove the kitchen twine and let the leeks cool.

Prepare basil

Wash and dry 4 sprigs of basil and pluck the leaves.

Arrange

Carefully separate the leek leaves and spread on 4 plates. Drizzle with 2 tablespoons of olive oil and 4 tablespoons of balsamic vinegar. Season with flower of salt and pepper from the mill.

Garnish

Sprinkle the basil leaves over the leeks and garnish with some red berries.
