Description

Preparation (6 steps)
Prepare the swedes
Wash, peel and dice the swedes. Place the swede cubes in a separate pan.
Sauté the swedes
Add some clarified butter or bacon to the pan with the swede cubes and sauté until they begin to brown.
Cook the swedes
Add some water to the pan with the swedes until the swedes are covered. Cook the swedes until they are soft. At the end of the cooking time, there should be practically no water left in the pot.
Season the swedes
Season the cooked swedes with a pinch of salt, pepper and nutmeg.
Purée the swedes
Place the seasoned swedes in the mixing bowl and purée for 30 sec/speed 8.
Refine the purée
Add one or two flakes of butter to the purée to taste and stir in for 10 sec/speed 3.
