Description

This rustic crust roast from the Thermomix® is a hearty main course with roast pork, caraway, peppercorns, celery and carrots. Preparation in the Thermomix® takes about 160 minutes, including 30 minutes of active work, and yields 8 servings. Ideal for festive occasions, the winter season or as a hearty family meal. The recipe is not low-carb, vegan or high in protein.

Ingredients (13 ingredients)

  • 2.5 kg Pork roast with rind (shoulder or leg)
  • 1 TL Salt
  • 1 TL Caraway
  • 15 Stück Peppercorns
  • 0.5 Stück Celery root
  • 1 Stück Carrot
  • 1 Stück Onion
  • 3 Blätter Bay leaves
  • 3 Stück Cloves
  • 1 EL Honey
  • 3 EL Vinegar
  • 20 g Oil
  • 500 ml Water

Preparation (7 steps)

Prepare vegetables

Peel 0.5 celery root, 1 carrot and 1 onion and cut into coarse pieces. Set aside the prepared vegetable pieces.

Prepare spice mixture

Thermomix® Setting

Put 1 tsp salt, 1 tsp caraway and 15 peppercorns into the mixing bowl and chop for 10 sec./speed 10. Transfer the spice mixture and set aside.

Prepare roast

Rub the 2.5 kg pork roast with rind (shoulder or leg) with the spice mixture. Score the rind in a diamond pattern with a sharp knife, being careful not to cut into the meat.

Sauté vegetables

5 min/248°F/Speed 1 120

Put the prepared vegetables (celery, carrot, onion), 3 bay leaves and 3 cloves into the mixing bowl and chop for 5 sec./speed 5. Then add 20g oil and sauté for 5 min./120°C/speed 1.

Cook roast

5 sec/Speed 5

Place the prepared roast in a roasting pan and add the sautéed vegetables from the mixing bowl. Add 500 ml water to the mixing bowl and mix for 5 sec./speed 5. Pour the liquid over the roast. Cook the roast in a preheated oven at 200°C (top/bottom heat) for approx. 2 hours. Make sure that the bottom of the roasting pan is always covered with liquid. If necessary, add more water.

Prepare glaze

Thermomix® Setting
20 sec/Speed 3

Put 1 tbsp honey and 3 tbsp vinegar into the mixing bowl and stir for 20 sec./speed 3 until the honey has dissolved.

Glaze roast

5-10 minutes before the end of the cooking time, brush the roast with the honey-vinegar mixture and continue baking until the crust has a nice caramel color.
