Description

These three sauces are ideal to accompany any fish or seafood dish. Tartar sauce, with its acidic and crunchy touch, pink sauce, sweet and smooth, and hot sauce, for the most daring, offer an explosion of flavors that enhance the flavor of the sea. Preparing them in the Thermomix® is very simple and fast, in less than 30 minutes you will have three delicious sauces ready to enjoy! I often prepare them for my summer dinners with friends, they are always a success! Also, you can adjust the quantities of the ingredients to adapt them to your personal taste. Go ahead and try them!

Ingredients (13 ingredients)

  • 4 tbsp Mayonnaise
  • 1 tbsp Onion
  • 1 tbsp Capers in vinegar
  • 1 tbsp Gherkins in vinegar
  • 1 tsp Mild mustard
  • 1 piece Cooked egg
  • 4 tbsp Mayonnaise
  • 2 tbsp Tomato sauce
  • 1 tbsp Cognac
  • 1 tbsp Orange juice
  • 5 tbsp Tomato sauce
  • 1 tsp Tabasco
  • 4 tbsp Orange juice

Cooking the egg for the tartar sauce

12 min/212°F/Speed 1 100

Place an egg in the basket and fill the bowl with 500 ml of water. Program 12 Min./100°C/Stufe 1. Once cooked, cool the egg under cold water, peel it and reserve.

Preparation of the tartar sauce

Thermomix® Setting
3 Seg./Speed 5

Finely chop 1 tablespoon of onion, 1 tablespoon of capers in vinegar and 1 tablespoon of gherkins in vinegar. Add to the bowl together with the reserved cooked egg. Program 3 Seg./Stufe 5 to chop the ingredients.

Final mixture of the tartar sauce

Thermomix® Setting
5 Seg./Linkslauf/Speed 3 Reverse

Add 4 tablespoons of mayonnaise and 1 teaspoon of mild mustard to the bowl. Mix 5 Seg./Linkslauf/Stufe 3. Correct with salt if necessary. Reserve in the refrigerator.

Preparation of the pink sauce

Thermomix® Setting
5 Seg./Speed 3

Squeeze the juice of half an orange (approximately 1 tablespoon). Pour into the bowl along with 4 tablespoons of mayonnaise, 2-3 tablespoons of tomato sauce and 1 tablespoon of liqueur. Mix 5 Seg./Stufe 3.

Flavor adjustment and preservation of the pink sauce

3 Seg./Speed 2

Taste the pink sauce and rectify any ingredient if necessary. Mix 3 Seg./Stufe 2. Keep well covered in the refrigerator until serving.

Preparation of the hot sauce

Thermomix® Setting
5 Seg./Speed 3

Pour 5 tablespoons of tomato sauce, 1 teaspoon of hot sauce and 4 tablespoons of freshly squeezed orange juice into the bowl. Mix 5 Seg./Stufe 3.

Flavor adjustment and preservation of the hot sauce

3 Seg./Speed 2

Taste the hot sauce and rectify any ingredient if necessary. Mix 3 Seg./Stufe 2. Keep well covered in the refrigerator until serving.
