Description

This hearty vegetable soup is a real comfort food that warms you up especially on cold days. With lots of fresh vegetables such as carrots, potatoes, kohlrabi, leek and celery, it is not only delicious, but also rich in vitamins. The soup is easy to prepare and perfect for the whole family. If you like, you can refine it with Vienna sausages. A dash of Maggi rounds off the taste, but is of course optional. The preparation in the Thermomix® makes the recipe particularly uncomplicated and fast.

Ingredients (9 ingredients)

  • 1 kg Carrots
  • 1.5 kg Potatoes, predominantly waxy
  • 1 piece Kohlrabi, small
  • 2 Stange Leek
  • 0.25 piece Celeriac, amount depending on size
  • 1 bunch Parsley
  • Vegetable bouillon cubes
  • Salt
  • Vienna sausages

Preparation (7 steps)

Prepare vegetables

Peel the carrots and cut into rings. Peel the potatoes and kohlrabi and cut into cubes. Chop the celery. Clean the leek and cut into rings.

Put vegetables into the mixing bowl

Put the prepared vegetables into the mixing bowl.

Cook vegetables

Thermomix® Setting
30 min/212°F/Speed 1 100

Add water to the mixing bowl until the vegetables are almost covered. Cook for 30 min./100°C/speed 1.

Crush vegetables

After half the cooking time, use the spatula to crush the vegetables a little.

Prepare parsley

In the meantime, pluck the parsley from the stalks.

Season soup

Thermomix® Setting
5 sec/Speed 3

Season the soup to taste with salt and vegetable bouillon cubes. Stir for 5 sec./speed 3.

Add parsley

Thermomix® Setting
1 min/212°F/Speed 1 100

Add the parsley and stir in for 1 min./100°C/speed 1.
