Description

This apple pie in the style of Alsace is a poem! The shortcrust pastry, the juicy apples and the creamy topping harmonize perfectly with each other. I especially like to bake it in autumn, when the apples are fresh from the tree. The preparation is a bit more complex, but the result is worth it. A piece of cake and a cup of coffee - that's the way to live! If you like, you can add a few raisins or almonds to the dough. Simply tastes delicious!

Ingredients (10 ingredients)

  • 250 g Wheat flour Type 405
  • 100 g Sugar
  • 1 Pck. Bourbon vanilla sugar
  • 1 Prise(n) Salt
  • 125 g Butter (cold)
  • 1 kg Apples
  • 1 piece Lemon
  • 100 ml Milk
  • 100 ml Cream
  • 2 piece Eggs

Preparation (6 steps)

Prepare dough

Thermomix® Setting
10 sec/Speed 4, 2 min/Kneading speed

Put 250 g wheat flour type 405, 100 g sugar (remove 25 g of it), 1 pack. Bourbon vanilla sugar and 1 pinch of salt in the mixing bowl and mix for 10 sec./speed 4. Add 125 g cold butter in pieces and knead for 2 min./kneading stage to form a smooth dough. If the dough is too dry, add cold water one tablespoon at a time until it has the right consistency. Wrap the dough in cling film and chill for 30 minutes.

Prepare apples

Preheat oven to 180 °C top/bottom heat. Wash, peel, quarter 1 kg apples and remove the core. Cut the apple pieces lengthwise several times approx. 3 mm deep on the curved side. Mix with 2-3 tablespoons of lemon juice and 25 g of sugar.

Roll out and cover dough

Roll out the dough a little larger than the springform pan (26 cm). Carefully place on the greased bottom of the mold and pull up an edge. Prick the bottom several times with a fork and spread the apples on top with the curve facing up.

Pre-bake cake

Bake the cake in a preheated oven for 25 minutes.

Prepare cream

Thermomix® Setting
2 min/Speed 3,5, 10 sec/Speed 2

Put 2 eggs and 50 g sugar in the mixing bowl and beat with the butterfly for 2 min./speed 3.5. Add 100 ml milk and 100 ml cream and stir in for 10 sec./speed 2.

Finish baking cake

After 25 minutes of baking time, take the cake out of the oven, spread the cream on the apples and finish baking the cake in approx. 35-40 minutes.
