Description

This apple and yogurt cake is a true comfort food, perfect for breakfast or a snack. Its soft texture and enveloping aroma of caramelized apples make it irresistible. I have been preparing this cake for years and it is always a success! The apples, cut into cubes and caramelized, melt in your mouth, while the yogurt gives the dough a unique softness. The preparation is simple and quick, also ideal for those who do not have much experience in the kitchen. A perfect dessert to indulge in during cold autumn days, perhaps accompanied by a cup of hot tea. Try it, you won't regret it!

Ingredients (9 ingredients)

  • 250 g Type 00 flour
  • 200 g Sugar
  • 1 container Plain natural yogurt
  • 80 ml Seed oil
  • 5 piece Apples
  • 3 piece Eggs
  • 1 packet Baking powder
  • 1 packet Vanillin
  • 50 g Cane sugar

Preparation (8 steps)

Caramelized diced apples

Thermomix® Setting
10 min/212°F/Speed 1 100

Put 3 peeled, cored and diced apples of 1 cm into the Mixtopf. Add 50 g sugar and let it caramelize for 10 Min./100°C/speed 1 without measuring cup. Transfer to a bowl and set aside.

Whisk eggs and sugar

Thermomix® Setting
3 min/Speed 4

Put 150 g sugar and the egg yolks into the Mixtopf and whisk for 3 Min./speed 4, until the mixture is light and fluffy. Set the egg whites aside.

Add yogurt

Thermomix® Setting
20 sec/Speed 3

Add 1 jar of plain natural yogurt and mix for 20 sec./speed 3.

Mix flour, baking powder and vanillin

Thermomix® Setting
10 sec/Speed 4

Put 250 g type 00 flour, 1 sachet of baking powder and 1 sachet of vanillin into the Mixtopf and mix for 10 sec./speed 4.

Combine dry ingredients and caramelized apples

30 sec/Linkslauf Speed 2 Reverse

Put the dry mix into the mixture in the Mixtopf and mix for 30 sec./reverse rotation speed 2. Add the caramelized apple cubes and stir in for 10 sec./reverse rotation speed 1.

Whisk egg whites

Thermomix® Setting
3 min/Speed 3.5

Whisk the egg whites set aside with butterfly 3 Min./speed 3.5 until stiff peaks form.

Incorporate egg whites into the mixture

10 sec/Linkslauf Speed 1 Reverse

Add the whipped egg whites to the mixture in the Mixtopf and gently fold in for 10 sec./reverse rotation speed 1.

Bake the cake

Grease and flour a 26 cm baking tin and pour the cake mixture inside. Peel 2 apples, core them and cut them into thin slices. Use the apple slices to decorate the surface of the cake, sprinkle cane sugar on the surface and bake in a preheated oven at 180°C for 45 minutes. Do the toothpick test to check if it is dry otherwise continue baking for another 5 minutes.
