Ingredients (16 ingredients)

  • 1500 g small firm-cooking potatoes
  • Salt
  • 70 g medium-hot mustard
  • 30 g dried porcini mushrooms
  • 500 g fresh porcini mushrooms
  • 5 Stück Onions
  • 3 Stiele Lovage
  • 9 EL Clarified butter
  • 2 Stück Top round roasts (à 700-800 g)
  • Pepper
  • 1650 g Savoy cabbage
  • 500 g young carrots
  • 6 EL Butter
  • Nutmeg
  • 6 EL Breadcrumbs
  • 2 EL Flour

Preparation (6 steps)

Prepare the potatoes

Thermomix® Setting

The day before, peel and wash the potatoes and place them in the mixing bowl. Cover with salted water and cook for 20 min./100°C/speed 1. Then drain and mix with mustard in a bowl. Let cool and leave covered in the refrigerator overnight.

Soak and prepare the porcini mushrooms

The next day, soak the dried porcini mushrooms in approx. 1.5 l of lukewarm water for 2 hours. Clean the fresh porcini mushrooms and slice them. Peel and dice 4 onions. Wash lovage and tie the stems together. Drain the soaked mushrooms and collect the mushroom water. Place the soaked mushrooms in the mixing bowl and chop for 5 sec./speed 5.

Prepare the roast (NOT in the Thermomix!)

Heat 2 tbsp clarified butter in a large roasting pan. Sear the meat vigorously in it, possibly one after the other, season with salt and pepper, and remove. Heat 2 tbsp clarified butter in the roasting fat. Sauté onions, fresh and soaked porcini mushrooms in it. Season with salt and pepper. Add mushroom water, lovage and meat. Bring to a boil and simmer covered in the preheated oven (electric oven: 140 °C/fan oven: 120 °C/gas: see manufacturer) for approx. 3 hours.

Prepare vegetables

Wash the cabbage, first quarter it, then cut into strips from the stalk. Peel, wash and dice the carrots. Peel and dice 1 onion. Put 4 tbsp butter in the mixing bowl and melt for 3 min./120°C/speed 1. Add onion, carrots and cabbage and chop for 5 sec./speed 4. Season with salt. Pour in 350 ml water and cook for 20 min./100°C/speed 1. Season with salt, pepper and nutmeg.

Prepare fried potatoes (NOT in the Thermomix!)

Mix potatoes with breadcrumbs. Heat 5 tbsp clarified butter in a pan. Fry the potatoes in it until golden brown.

Prepare the sauce

Knead flour and 2 tbsp butter together. Remove meat and lovage from the roasting pan. Pour roasting juices into the mixing bowl. Add flour butter and stir for 5 min./100°C/speed 2 to thicken the sauce.
