Description

This banana cream cheese cake is an absolute eye-catcher on every coffee table! The loose sponge base, soaked with amaretto, harmonizes wonderfully with the creamy cream cheese filling and the fresh banana slices. I especially like to make this cake in spring, when the first rays of sunshine beckon and you feel like something sweet. It is not only visually a highlight, but also tastes simply delicious. A recipe that is always well received by friends and family!

Ingredients (17 ingredients)

  • 3 piece Egg(s)
  • 125 g Sugar
  • 1 Pck. Vanilla sugar
  • 70 g Flour
  • 70 g Cornstarch
  • 2 tsp Baking powder
  • 50 g Butter liquid, cooled
  • 200 g Cream cheese
  • 125 g Crème fraîche
  • 100 g Sugar
  • 1 Pck. Vanilla sugar
  • 4 tbsp Amaretto
  • 200 ml Cream
  • 1 Pck. Cream stiffener
  • 1 piece Banana(s)
  • 4 tbsp Amaretto
  • Cocoa powder

Preparation (9 steps)

Whisk eggs, sugar and vanilla sugar until frothy

Put 3 eggs, 125 g sugar and 1 pack of vanilla sugar into the mixing bowl and whisk for 3 min./speed 4 until frothy.

Mix flour, cornstarch and baking powder and stir in

Put 70 g flour, 70 g cornstarch and 2 tsp baking powder into the mixing bowl and stir in for 15 sec./speed 3.

Stir in liquid butter

Thermomix® Setting
10 sec/Speed 2

Add 50 g liquid, cooled butter to the mixing bowl and stir in for 10 sec./speed 2.

Bake the batter

Pour the batter immediately into a greased springform pan and bake for about 30 minutes at 175°C. (Not in the Thermomix)

Soak the base with Amaretto and cover with bananas

Soak the cooled base with 4 tbsp Amaretto, cut the banana into slices and cover the base with it. (Not in the Thermomix)

Prepare cream cheese cream

Put 200 g cream cheese, 125 g crème fraîche, 100 g sugar and 1 pack of vanilla sugar into the mixing bowl and stir for 30 sec./speed 3.

Whip the cream until stiff

Thermomix® Setting
2 min/Speed 3,5

Put 200 ml cream and 1 pack of cream stiffener into the mixing bowl, insert the butterfly and whip for 2 min./speed 3.5 until stiff. Visual inspection!

Fold in cream

Carefully fold the whipped cream into the cream cheese cream with a spatula. (Not in the Thermomix)

Finish the cake

Spread the cream on the base and possibly dust with cocoa powder. (Not in the Thermomix)
