Description

This carrot omelette with avocado is a recipe I often prepare for a quick and nutritious breakfast or brunch. The combination of grated carrot with cheese and creamy avocado is simply delicious. Also, it is an excellent way to incorporate more vegetables into your diet. The preparation is very simple and in less than 20 minutes you have a dish ready to enjoy. Perfect for those days when you don't have much time but want to eat something rich and healthy. Go ahead and try it, you'll love it! It is a vegetarian and protein-rich option.

Ingredients (8 ingredients)

  • 6 piece Carrots
  • 4 piece Free-range eggs
  • 1 piece Avocado
  • 0.5 piece Lemon (juice)
  • Edam cheese (grated)
  • Extra virgin olive oil
  • to taste Salt
  • to taste Black pepper

Preparation (5 steps)

Grate the carrot and cheese

We peel the 6 carrots and insert them into the glass. We grate for 5 Sec./Stufe 5. We remove and reserve. Next, we grate the Edam cheese for 5 Sec./Stufe 5. We remove and reserve.

Prepare the avocado

We peel and cut the avocado into segments. We add a few drops of lemon juice to prevent it from oxidizing. We reserve.

Beat the eggs and mix with the ingredients

In a bowl, we beat the 4 eggs with a pinch of salt and black pepper. We add the grated carrot and the grated cheese. We mix well. We divide the mixture into 3 portions.

Cook the omelette

We heat a little extra virgin olive oil in a non-stick frying pan over medium-low heat. We pour a portion of the egg, carrot and cheese mixture. We cook the omelette on both sides until golden brown. We repeat the process with the remaining two portions.

Serve the omelette

We plate the omelette. We place 1/3 of the avocado on one side and close the omelette. We serve immediately.
