Beschreibung

These milk-soaked small cakes are an absolute delight! I especially like to make them for birthdays or other festive occasions. The small cakes are super juicy and creamy because they are soaked in a mixture of three different types of milk. The recipe is a bit more complex, but the effort is definitely worth it! The small cakes are not too sweet and have a pleasant vanilla note. They can also be prepared well in advance, as they need to sit for a while after soaking. A great dessert that everyone will love!

  • 2 Stück eggs, separated
  • 0.5 Tasse white sugar, divided
  • 0.25 Tasse milk
  • 1 dash vanilla extract
  • 0.5 Tasse cake flour
  • 0.5 TL baking powder
  • 1 Prise salt
  • 0.25 TL cream of tartar
  • 6 ounce evaporated milk
  • 0.5 Tasse heavy whipping cream
  • 0.5 Tasse sweetened condensed milk
  • 1 dash vanilla extract, or to taste
  • 2 ounces cream cheese, softened
  • 2 tablespoons white sugar
  • 0.5 TL vanilla extract
  • 0.25 Tasse cold heavy whipping cream

Preheat Oven and Prepare Muffin Tin

Preheat the oven to 165°C (325°F). Line a muffin tin with 12 paper liners.

Separate Eggs and Prepare Egg Yolk Mixture

Separate 2 eggs. Place egg yolks, 1/3 cup sugar, 1/4 cup milk, and 1 dash vanilla extract in the mixing bowl and mix for 2 min./speed 3.

Mix and Add Dry Ingredients

In a separate bowl, mix 1/2 cup cake flour, 1/2 tsp baking powder, and 1 pinch salt. Add the dry ingredients to the egg yolk mixture in the mixing bowl and stir in for 20 sec./speed 2.

Whisk Egg Whites

Insert the butterfly whisk. Add 2 egg whites and 1/4 tsp cream of tartar to the mixing bowl and whisk until stiff for 3 min./speed 3.5. After 1 minute, slowly sprinkle in the remaining sugar (1/6 cup).

Fold in Egg Whites

Carefully fold the egg whites into the batter in the mixing bowl with a spatula until everything is well combined.

Fill Batter into Muffin Liners

Fill the batter evenly into the prepared muffin liners.

Bake Cupcakes

Bake the muffins in the preheated oven for 12-15 minutes, until a toothpick inserted into the center comes out clean. Let cool slightly.

Prepare Milk Mixture

Place 1 (6 ounce) can evaporated milk, 1/2 cup heavy cream, 1/2 cup sweetened condensed milk, and 1 dash vanilla extract in the mixing bowl and mix for 20 sec./speed 3.

Soak Cupcakes

Poke holes in the cooled cupcakes with a toothpick. Spoon the milk mixture over the cupcakes (4-5 tablespoons per cupcake).

Prepare Frosting

1 Min./Stufe 3.5

Place 2 ounces cream cheese, 2 tbsp sugar, and 1/2 tsp vanilla extract in the mixing bowl and mix for 30 sec./speed 4. Then add 1/4 cup cold heavy cream and whisk until stiff for 1 min./speed 3.5 with the butterfly whisk.

Decorate Cupcakes

Spread the frosting on the soaked cupcakes and decorate as desired.
