Description

This poultry with plums dish is an autumnal delight that warms the heart. I love preparing this recipe because it is both simple and full of flavour. The yellow plums, slightly tart, blend perfectly with the tender poultry and fragrant spices. A little Espelette pepper adds a warm touch. Accompanied by wheat pearls, it is a complete and comforting meal, perfect for a Sunday lunch or a friendly dinner with friends. Feel free to adjust the amount of chilli to your preferences. A real treat!

Ingredients (16 ingredients)

  • 450 g of chickens
  • 400 g of yellow plums
  • 1 packet of wheat pearls
  • 2 c. à c. of cornstarch diluted in a little water
  • 40 cl of poultry stock
  • to taste Parsley
  • to taste Espelette pepper
  • 2 c. à s. of sherry vinegar
  • 1 c. à s. of brown cane sugar or brown sugar
  • 1 piece red onion, thinly sliced
  • 1 clove of crushed garlic
  • 5 cl of sweet white wine
  • 2 c. à c. of poultry stock
  • 1 c. à c. level(s) of five spice
  • 2 c. à s. of olive oil
  • to taste Salt or fine salt

Preparation (7 steps)

Ingredient preparation

Thinly slice the red onion and crush the garlic clove. Pit and slice the plums. Cut the chicken into small pieces. Dilute the cornstarch in a little water.

Cooking the onion and garlic

Pour the olive oil into the Thermomix bowl. Add the sliced red onion and crushed garlic clove. Sauté for 4 minutes / 120°C / Stufe 1.

Browning the chicken

Add the pieces of chicken to the Thermomix bowl. Brown for 5 minutes / 120°C / Stufe 2, stirring with the spatula.

Adding the plums and spices

Add the poultry stock, sweet white wine, plums, sherry vinegar, brown cane sugar and five spices to the Thermomix bowl. Mix gently with the spatula.

Simmering the chicken with plums

Moisten with the poultry stock. Cook for 25 minutes / 100°C / Stufe 1 / Linkslauf.

Thickening the sauce

Remove the chicken and plums from the bowl and set aside to keep warm. Add the diluted cornstarch to the Thermomix bowl. Cook for 5 minutes / 90°C / Stufe 2.

Finalise and serve

1 min / 194°F / Speed 1 / Linkslauf 90 Reverse

Return the chicken and plums to the Thermomix bowl. Adjust the seasoning with Espelette pepper and salt. Mix for 1 minute / 90°C / Stufe 1 / Linkslauf. Sprinkle with fresh chopped parsley and serve with the wheat pearls.
