These wholemeal cornstarch alfajores are a healthy and easy-to-prepare delight with the Thermomix®. Ingredients (9 ingredients)

  • 75 gramos cornstarch
  • 50 gramos wholemeal flour
  • 30 gramos sugar
  • 1 piece egg
  • 0.5 tsp baking powder
  • 1 tsp vanilla essence
  • 150 gramos dulce de leche pastry
  • 3 tbsp shredded coconut
  • 30 centímetros cúbicos oil

Beat oil and sugar

Place 30 cubic centimetres of oil and 30 grams of sugar in the Thermomix bowl. Mix for 20 seconds at speed 3.

Incorporate egg and vanilla

Add 1 egg and beat for 30 seconds at speed 4 until a frothy preparation is obtained. Then, add 1 teaspoon of vanilla essence and mix for 10 seconds at speed 3.

Mix dry ingredients

In a separate bowl, mix 75 grams of cornstarch, ½ teaspoon of baking powder and 50 grams of wholemeal flour. Sift the dry ingredients over the wet mixture in the Thermomix bowl. Mix for 20 seconds at speed 3. If there is any fibre from the wholemeal flour left in the sieve, incorporate it at the end.

Form and stretch the dough

Remove the dough from the Thermomix bowl. Without kneading, form a ball and stretch it until it is approximately half a centimetre high. Use a rolling pin on a lightly floured surface.

Cut and bake the lids

With a round cutter, form the alfajores lids. Place them on a previously greased baking sheet. Bake at 180 ºC for 6-10 minutes, or until lightly golden. Do not use the Thermomix for this step.

Fill with dulce de leche

Once the lids are cold, fill them with 150 grams of dulce de leche pastry. You can use a pastry bag to facilitate the filling. Then, cover them and set them aside.

Cover with shredded coconut

Pass each alfajor through 3 tablespoons of shredded coconut to finish.
