Description

I love this scrambled eggs with sardines recipe, it's a simple and quick dish, perfect for a Sunday brunch or a quick lunch. The combination of creamy eggs and savory sardines is simply delicious. I always use good quality sardines in oil for optimal taste. A little fresh chopped parsley adds a touch of freshness. It's a great way to consume fish and protein in the morning. Serve them on slices of toast for a complete and satisfying meal. Feel free to add a pinch of chili to enhance the taste!

Ingredients (7 ingredients)

  • 20 g Sweet butter
  • 7 piece Whole egg(s)
  • 2 can Sardine(s) in oil
  • 1 c. à soupe Olive oil
  • 1 bunch Parsley
  • 1 l Salt
  • 1 l Pepper

Preparation (7 steps)

Chop parsley

Wash, dry carefully and chop the parsley. Set aside.

Prepare sardines

Drain the sardines and set aside a few for decoration. Put the rest of the sardines in a bowl and crush with 20 g of softened butter.

Beat eggs

In a second bowl, whisk 7 whole eggs into an omelet. Salt and pepper to your liking.

Heat oil

Pour 1 tbsp of olive oil into the bowl and heat.

Pour the beaten eggs into the bowl and cook, stirring constantly with the spatula.

Add the sardine mixture to the butter and finish cooking, always mixing constantly with the spatula.

Serve immediately on slices of toast, decorated with whole sardines and chopped parsley.
