Description

This quince compote is a poem! I make it every year in the fall when the quinces are ripe. The preparation is super easy with the Thermomix®. The quinces become soft and aromatic, the vanilla scent is simply wonderful. The compote tastes great on its own, with ice cream, rice pudding or pancakes. It can also be wonderfully preserved in jars and will then keep for the whole winter. A great recipe to capture and preserve the flavors of autumn. Be sure to try it!

Ingredients (5 ingredients)

  • 1 kg Quinces
  • 220 g Sugar
  • 1 piece Vanilla bean
  • 1 pinch Salt
  • 500 ml Water

Preparation (5 steps)

Prepare quinces

Wash the quinces, rub them dry and remove the light fluff from the peel. Peel, core and cut the fruit into coarse pieces. Use a good knife, because the fruits are quite hard.

Prepare sugar water

Thermomix® Setting
3 min/212°F/Speed 2 100

Add 500 ml water and 220 g sugar to the mixing bowl and heat for 3 min./100°C/speed 2 until the sugar has dissolved.

Add quinces and flavors

Add the prepared quince pieces, the pulp of a vanilla bean (cut the bean lengthwise and scrape out the pulp) and 1 pinch of salt to the mixing bowl.

Simmer compote

Thermomix® Setting
25 min/212°F/Gentle stir speed 100 Reverse

Simmer everything for 25 min./100°C/gentle stir setting until the quince pulp is soft. Activate the reverse function.

Remove vanilla bean and cool

Remove the vanilla bean and let the compote cool. Alternatively, fill boiling hot into sterilized preserving jars, wipe the glass rims clean if necessary and close the jars immediately. Stored in a dark and cool place, they will keep for at least 1 year.
