  • 400 g Flour
  • 100 g Almonds
  • 150 g Sugar
  • 1 Päckchen Vanilla sugar
  • 1 Prise Salt
  • 150 g Butter, soft
  • 1 Stück Egg
  • 1 Würfel Yeast
  • 1 TL Sugar
  • 100 ml Milk
  • 250 g Raisins
  • 50 g Candied lemon peel
  • 50 g Candied orange peel
  • 50 ml Rum
  • 50 g Butter, melted
  • Powdered sugar

Preparation (8 steps)

Chop almonds

Place 100 g almonds into the mixing bowl and chop for 8 seconds/speed 6. Transfer and set aside.

Prepare yeast

Place 100 ml milk, 1 cube yeast and 1 teaspoon sugar into the mixing bowl and heat for 2 minutes/37°C/speed 2.

Prepare dough

Place 400 g flour, 150 g sugar, 1 packet vanilla sugar, 1 pinch salt, 150 g soft butter in pieces, 1 egg and the prepared yeast-milk mixture into the mixing bowl and knead for 3 minutes/kneading setting to form a dough.

Let dough rise

Transfer the dough to a bowl and cover. Let rise in a warm place for about 1 hour, until the volume has doubled.

Prepare filling

Add 250 g raisins, 50 g candied lemon peel, 50 g candied orange peel, 50 ml rum and the chopped almonds to the dough. Knead well with your hands.

Shape stollen

Roll out the dough on a floured work surface to form an oval. Roll out one side slightly thicker and place it over the other side, creating the typical stollen shape. Place on a baking tray lined with baking paper.

Bake stollen

Bake the stollen in a preheated oven at 180°C top/bottom heat for approx. 50-60 minutes.

Refine stollen

Brush the still warm stollen with 50 g melted butter and sprinkle with powdered sugar. Let cool completely.
