Description

This mellow rice with artichokes is a comforting and flavorful dish, perfect to enjoy in spring when artichokes are at their best. The recipe, which I have adapted for the Thermomix®, is simpler than it seems and the result is a creamy and delicious rice. Fresh artichokes give it a special touch, and saffron enhances its flavor and color. It is ideal for a family meal or to surprise your guests with an authentic and healthy Mediterranean dish. Go ahead and try it, you will love it!

Ingredients (10 ingredients)

  • 350 gramos bomba rice
  • 3 piece artichokes
  • 1 piece onion
  • 1 trozo leek
  • 1 clove garlic
  • 1.5 litros vegetable broth
  • 3 cucharadas soperas crushed tomato
  • 1 cucharada postre saffron
  • 1 chorro olive oil
  • 1 pinch salt

Preparation of the artichokes

Clean the artichokes removing the hard outer leaves until reaching the tender heart. Cut the tips and stems. Cut the artichokes into quarters and place them in a bowl with cold water and parsley or a few slices of lemon to prevent them from oxidizing. Reserve.

Chopping onion, leek and garlic

Peel the onion, the leek and the garlic clove. Introduce the onion in the Thermomix bowl and chop 3 sec./Stufe 5. Remove and reserve. Introduce the leek and the garlic in the Thermomix bowl and chop 3 sec./Stufe 5. Remove and reserve.

Sautéing artichokes, leek and onion

Add a splash of olive oil (approximately 30 ml) to the Thermomix bowl. Drain the artichokes well and add them to the bowl. Sauté 5 Min./120°C/Stufe 1. Add the chopped onion and leek and sauté 5 Min./120°C/Stufe 1.

Add garlic and tomato

Add the minced garlic and sauté 1 Min./120°C/Stufe 1. Incorporate the crushed tomato (3 tablespoons) and sauté 5 Min./120°C/Stufe 1.

Incorporate the rice

Add the rice (350 grams) to the bowl and sauté 3 Min./120°C/Stufe 1, stirring with the spatula so that it is well impregnated with the sofrito.

Add the broth and saffron

Heat the vegetable broth (1½ liters). Add the hot broth to the Thermomix bowl, along with a pinch of salt and a dessert spoon of saffron. Program 8 Min./100°C/Stufe 1.

Final cooking of the rice

Lower the temperature to 95°C and continue cooking for 7 Min./95°C/Stufe 1. If the broth evaporates a lot, add more hot broth or water.

Rest and serve

Check the cooking point of the rice and rectify salt if necessary. Let it rest for 5 minutes inside the bowl before serving hot.
