Description

This fusilli salad is a real summer hit! The combination of creamy avocado, spicy feta, crunchy red onions and salty olives makes it a taste experience. I love how quick and easy it is to prepare – perfect for a light lunch or a picnic in the countryside. The fresh rocket adds a slightly peppery note, and the dressing of olive oil and cider vinegar rounds everything off perfectly. If you like, you can add a few roasted pine nuts or sunflower seeds. An absolute must for all pasta salad lovers!

Ingredients (11 ingredients)

  • 350 g fusilli
  • 100 g feta
  • 1 piece avocado
  • 75 g pitted olives
  • 0.5 piece red onion
  • 200 g cherry tomatoes
  • 4 poignées rocket
  • Olive oil
  • Cider vinegar
  • Coarse salt
  • Pepper from the mill

Cook fusilli

Thermomix® Setting
12 min/212°F/Speed 1 100

Put 350 g fusilli into the mixing bowl, add 1 litre water and 1 tsp coarse salt and cook for 12 Min./100°C/level 1. Then pour through a sieve and let cool.

Chop red onion

Thermomix® Setting
3 sec/Speed 5

Put ½ red onion into the mixing bowl and chop for 3 sec./level 5. If necessary, push down with the spatula.

Halve tomatoes

Halve 200 g cherry tomatoes and set aside.

Prepare avocado

Peel, core and dice 1 avocado.

Mix salad

Put the cooled fusilli, the chopped red onion, the halved cherry tomatoes, the diced avocado, 100 g feta, 75 g pitted olives and 4 handfuls of rocket in a large bowl. Drizzle with olive oil and cider vinegar to taste. Season with coarse salt and pepper from the mill and mix well.
