Description

The Polish pearl barley soup is a hearty and warming dish, ideal for the cold season. With celery, carrots, onions and mushrooms, it is rich in vegetables and pearl barley makes it filling. Yogurt and lemon give the soup a fresh note. Preparation takes about an hour and yields six servings.

Ingredients (12 ingredients)

  • 200 g Celery
  • 200 g Carrots
  • 200 g Onions
  • 200 g Mushrooms
  • 150 g Margarine
  • 1.5 l Meat broth
  • 1 Flasche Yogurt
  • 4 Stück Egg yolk
  • Salt
  • 1 Stück Lemon
  • 150 g Pearl barley
  • 1 Strauß Parsley

Preparation (6 steps)

Prepare vegetables

Clean, wash and cut 200 g celery, 200 g carrots and 200 g onions into pieces. Clean 200 g mushrooms and cut into slices.

Sauté vegetables

Put 150 g margarine in the mixing bowl and melt for 3 minutes/120°C/speed 1. Add celery, carrots and onions and sauté for 5 minutes/120°C/speed 1.

Add mushrooms and broth

Add 200 g mushrooms and 1 1/2 l meat broth and cook for 20 minutes/100°C/speed 1.

Cook pearl barley

20 min/212°F/Speed 1 212°F

Add 150 g pearl barley and cook for another 20 minutes/100°C/speed 1.

Refine soup

Thermomix® Setting
5 min/176°F/Speed 1 176°F

Add 1 bottle of yogurt, juice of 1 lemon, 4 egg yolks and salt and stir for 5 minutes/80°C/speed 1.

Serve

Chop 1 bunch of parsley and sprinkle the soup with it. Serve hot.
