Description

This lentil soup with chicken and mint is a real comfort food, perfect for autumn evenings. The combination of lentils, tender chicken and a touch of fresh mint creates a unique and enveloping flavor. The preparation is simple and quick, ideal for those who have little time but do not want to give up a healthy and tasty dish. I often prepare it when I need something hot and nutritious. A tip? Serve it with a drizzle of extra virgin olive oil to enhance the flavor. Also excellent the next day, when the flavors have blended even more!

Ingredients (11 ingredients)

  • 300 g Chicken breast
  • 200 g Lentils
  • 1 bunch Aromatic bouquet
  • 2 piece Carrots
  • 1 piece Onions
  • 0.5 piece Leeks
  • 1 costa Celery
  • 3 tbsp Extra virgin olive oil (EVO)
  • 1 l Vegetable broth
  • 1 pinch Salt
  • 1 pinch Black pepper

Preparation (6 steps)

Preparation of lentils and broth

Wash the lentils thoroughly under running water. Heat the vegetable broth in a separate saucepan.

Chop the vegetables

Insert 1 onion, 2 carrots, 1 celery stalk and 1/2 leek cut into pieces into the bowl. Chop for 5 Sec./Stufe 5.

Sauté the vegetables and chicken

Thermomix® Setting

Add 3 tablespoons of extra virgin olive oil and 300g of chicken breast cut into cubes to the bowl. Sauté for 5 Min./120°C/Stufe 1.

Cooking the soup

60 min/212°F/Speed 1 100

Add the washed lentils, 1 aromatic bouquet, 1 liter of hot vegetable broth, salt and black pepper to taste to the bowl. Cook for 60 Min./100°C/Stufe 1.

Cut the chicken and finish cooking

Thermomix® Setting
15 min/212°F/Speed 1 100

Remove the chicken breast from the bowl, cut it into fillets and set aside. Continue cooking the lentils for another 15 Min./100°C/Stufe 1. At the end, remove the aromatic bouquet.

Combine the chicken and serve

Thermomix® Setting
1 min/Speed 1/Linkslauf Reverse

Put the sliced chicken breast back into the bowl and mix for 1 Min./Stufe 1/Linkslauf. Serve the hot soup with a drizzle of extra virgin olive oil.
