Description

This tart with cauliflowers and bacon is a comforting dish, perfect for autumn or winter evenings. I love preparing it with leftover cooked cauliflower from the day before, making it a delicious anti-waste option. Smoked bacon brings a salty and smoky flavor that goes wonderfully with the sweetness of the cauliflower and the richness of the crème fraîche. A little grated nutmeg adds a warm and fragrant touch. It's a simple tart to make, ideal for a quick lunch or a friendly dinner. Feel free to vary the cheeses for a personal touch!

Ingredients (11 ingredients)

  • 100 g of rindless smoked bacon
  • 30 g of butter
  • 2 pinch of nutmeg
  • to taste Salt
  • to taste Pepper
  • 100 g of grated parmesan
  • 10 cl of crème fraîche
  • 1 pack of shortcrust pastry
  • 1 can of Paris mushrooms
  • 2 piece eggs
  • 200 g of cooked cauliflower

Preparation (8 steps)

Preparation of the mushrooms

Drain the can of Paris mushrooms. Reserve.

Preparation of the pastry

Preheat the oven to 180°C (thermostat 6). Unroll the package of shortcrust pastry and prick it with a fork. Cover the dough with dried beans.

Blind baking the pastry

Bake the dough covered with dried beans for 10 minutes. Remove the beans and reserve the dough.

Cooking the bacon and mushrooms

Put 30g of butter in the Thermomix bowl. Heat for 2 minutes / 120°C / Stufe 1.

Adding the bacon and mushrooms

Add 100g of rindless smoked bacon and the can of drained Paris mushrooms to the bowl. Cook for 2 minutes / 120°C / Stufe 1.

Preparation of the sauce

In a bowl, whisk 2 eggs, 10cl of crème fraîche, half of 100g of grated parmesan, 2 pinches of nutmeg, salt and pepper. Mix.

Assembling the quiche

Spread 200g of cooked cauliflower (leftover from the day before) on the bottom of the pre-baked tart. Add the bacon and mushroom mixture. Pour the sauce over everything. Sprinkle with the remaining grated parmesan.

Baking the quiche

Bake the quiche for 30 minutes at 180°C.
