Description

This chicken stew is a comforting and flavorful dish, perfect for a family meal. The key is to brown the chicken well and then cook it slowly in a tasty broth with onion, garlic, green pepper and tomato. I always use free-range chicken for a more intense flavor. This dish is ideal to serve with white rice and beans, a classic that never fails! It can be prepared in advance and reheated, which makes it perfect for those busy days. The touch of tomato gives it a point of acidity that balances the richness of the chicken.

Ingredients (8 ingredients)

  • 1 kg Chicken in pieces
  • 1 piece Large onion
  • 4 clove Garlic
  • 2 piece Medium very ripe tomatoes
  • 1 piece Green pepper
  • Chicken broth
  • Oil
  • Salt

Preparation (7 steps)

Chicken preparation

Season 1 kg of chicken in pieces with 1 large onion cut into quarters, 4 cloves of garlic, 1 green pepper and salt to taste. Mix well so that the chicken is impregnated with the flavors.

Crush vegetables

Introduce the onion, garlic and green pepper into the Thermomix bowl. Crush for 5 seconds/Stufe 5.

Brown the chicken

Heat a little oil in a large frying pan. Add the seasoned chicken and brown on all sides. Remove the chicken from the pan and set aside.

Sauté the vegetables

Thermomix® Setting

Add a little more oil to the Thermomix bowl. Program 5 Min./120°C/Stufe 1 to sauté the crushed vegetables.

Cook the chicken

Thermomix® Setting
30 min/212°F/Giro a la izquierda/Speed 1 100 Reverse

Add the browned chicken to the Thermomix bowl. Add chicken broth to cover the chicken. Program 30 Min./100°C/Giro a la izquierda/Stufe 1. Watch and add more broth if necessary.

Add the tomato

Thermomix® Setting
10 min/212°F/Giro a la izquierda/Speed 1 100 Reverse

Add 2 medium very ripe tomatoes cut into small pieces to the bowl. Program 10 Min./100°C/Giro a la izquierda/Stufe 1 so that a small sauce is formed.

Serve

Serve the stewed chicken hot with white rice and beans.
