Description

This chocolate quark cake is a real eye-catcher on every coffee table! The juicy quark core harmonizes wonderfully with the chocolatey dough, which is distributed in small pieces on the filling. I especially like to bake this cake in winter, as the chocolate spreads a nice warmth. It is not only delicious, but also relatively easy to prepare, especially with the Thermomix®. An absolute must for all cake lovers and perfect for birthdays or other festive occasions!

Ingredients (14 ingredients)

  • 300 g Flour
  • 30 g Cocoa powder, unsweetened
  • 2 tsp Baking powder
  • 150 g Sugar
  • 1 Pck. Vanilla sugar
  • 1 piece Egg(s)
  • 150 g Butter
  • 500 g Low-fat quark
  • 200 g Sugar
  • 1 Pck. Vanilla sugar
  • 3 piece Egg(s)
  • 1 Pck. Vanilla pudding powder
  • 1 piece Vanilla bean(s), the pulp thereof
  • 200 g Butter

Preparation (7 steps)

Prepare dough

Thermomix® Setting
2 min/Kneading speed

Add 300 g flour, 30 g cocoa powder and 2 tsp baking powder to the mixing bowl and mix for 10 sec/speed 4. Add 150 g sugar, 1 packet of vanilla sugar, 1 egg and 150 g butter and process into a dough for 2 min/knead setting.

Chill dough

Form the dough into a ball, wrap in cling film and refrigerate for at least 30 minutes.

Prepare filling

Thermomix® Setting
30 sec/Speed 3

Put 500 g low-fat quark, 200 g sugar, 1 packet of vanilla sugar, the pulp of a vanilla bean, 3 eggs and 1 packet of vanilla pudding powder in the mixing bowl and stir for 30 sec/speed 3.

Melt butter

Thermomix® Setting
3 min/122°F/Speed 2 50

Put 200 g butter in the mixing bowl and melt for 3 min/50°C/speed 2.

Complete filling

Thermomix® Setting
10 sec/Speed 3

Add the melted butter to the quark mixture in the mixing bowl and stir in for 10 sec/speed 3.

Shape cake

Grease the bottom of a springform pan (26 cm diameter). Roll out half of the dough on a floured work surface and line the springform pan with it, creating an approx. 2 cm high rim. Pour the quark filling into the pan and smooth it out. Pluck the remaining dough into small pieces and spread over the filling.

Bake cake

Place the pan on the rack in the lower third of the preheated oven and bake at 180°C top/bottom heat for approx. 60 minutes. After baking, let the cake cool in the pan on a wire rack.
