Description

This chicken with peppers and mushrooms is a comforting and tasty dish, perfect for a Sunday lunch or a weeknight dinner. I love how the flavors of sweet red peppers and fresh mushrooms blend with the tender chicken. Fresh coriander adds a touch of freshness that really enhances the dish. Ingredients (9 ingredients)

  • Tomato concentrate
  • Rice
  • Olive oil
  • 1 piece Large tomato
  • 3 c à s Chopped coriander
  • 1 piece Onion
  • 300 g Fresh mushrooms
  • 2 piece Red peppers
  • 4 piece Chicken drumsticks

Preparation (8 steps)

Preparation of chicken drumsticks

Cut the end of the chicken drumsticks to keep only the largest piece. Set aside.

Preparation of vegetables

Thinly slice the onion and mushrooms. Peel the tomato and peppers and cut into cubes. Set aside.

Cooking the rice

Cook the rice according to the package instructions. Set aside.

Brown the chicken drumsticks

In a pan, heat a little olive oil. Add the drumsticks and brown on all sides. Remove and set aside.

Cooking the vegetables

Put the sliced onion in the Thermomix bowl and chop 3 Sec./Stufe 5. Add a drizzle of olive oil and sauté 3 Min./120°C/Stufe 1.

Adding mushrooms, tomato and peppers

Add the sliced mushrooms, tomato and peppers cut into cubes in the Thermomix bowl. Sauté 5 Min./120°C/Stufe 1.

Preparation of the sauce and cooking the chicken

Thermomix® Setting
50 min/212°F/Linkslauf Speed 1 100 Reverse

Add the browned chicken drumsticks, water to cover the drumsticks halfway, tomato concentrate, chopped coriander, salt and pepper to the Thermomix bowl. Mix gently with the spatula. Simmer 50 Min./100°C/Linkslauf Stufe 1. Turn the drumsticks every 10 minutes.

Serve

Place the rice on a plate, add the sauce and chicken drumsticks. Serve hot.
