Description

These Coconut Corners, prepared in the Thermomix®, are a delicious pastry with flour, butter and desiccated coconut. The recipe from the cookies category is particularly suitable for festive occasions and the Christmas season. The preparation time is a total of 120 minutes, of which 45 minutes are active working time. Ideal as a dessert or finger food for the whole family.

Ingredients (11 ingredients)

  • 400 g Flour, smooth
  • 200 g Butter
  • 80 g Icing sugar
  • 2 Stück Egg yolk
  • 1 Stück Whole egg
  • Coconut topping
  • 4 Stück Egg white
  • 100 g Sugar
  • 150 g Desiccated coconut
  • Red currant jam
  • Chocolate

Preparation (9 steps)

Prepare the dough

Thermomix® Setting
2 min/Kneading speed

Add flour, butter, icing sugar, egg yolk and the whole egg to the mixing bowl and process into a dough for 2 min./kneading stage.

Roll out the dough

Roll out the dough on a baking sheet to about 4 mm thick.

Prick the dough and bake

Prick the dough all over with a fork and bake at approx. 170°C for approx. 15-20 minutes until light.

Spread the jam

Remove the dough from the oven and spread with red currant jam.

Prepare egg whites

Put egg white and sugar into the mixing bowl. Insert butterfly and whisk stiff for 3 min./speed 3.5.

Stir in desiccated coconut

Thermomix® Setting
10 sec/Speed 2/Linkslauf Reverse

Add desiccated coconut and stir in for 10 sec./speed 2/reverse.

Spread the coconut topping and bake

Spread the coconut topping on the dough and bake until golden yellow.

Cut corners and dip in chocolate

Cut into corners and dip into the chocolate as desired.

Tip

Let the baked slices cool down and then put them in the freezer for an hour to cool. This allows you to cut exact corners (provided you have a sharp knife).
