Description

I love preparing lamb loins! This recipe is perfect for a festive meal or a special brunch. The lamb loins are marinated with fresh herbs, giving them a wonderful aroma. The long marinating time ensures that the meat is particularly tender and juicy. Fresh asparagus with a light lime butter goes perfectly with this. A real treat for the palate that not only tastes delicious but also looks great. The preparation is a bit time-consuming, but the result is worth it!

Ingredients (7 ingredients)

  • 600 g Lamb loin
  • 1 Handvoll Herbs roughly chopped (Rosemary, Lavender, Lemon thyme, Parsley, Lemon balm)
  • 4 tbsp Vegetable oil neutral
  • Olive oil
  • Butter
  • Pepper, white
  • Fleur de Sel

Chop herbs

Put a handful of roughly chopped herbs (Rosemary, Lavender, Lemon thyme, Parsley, Lemon balm) into the mixing bowl and chop for 5 sec./speed 8. Then transfer.

Prepare and marinate lamb loins

Turn lamb loins (or boned and trimmed lamb saddle) in the chopped herbs. Drizzle with 4 tbsp of vegetable oil and wrap tightly in cling film. Leave to infuse in the refrigerator for at least twelve hours.

Preheat oven

Preheat the oven to 80°C (preferably without convection).

Fry lamb loins

Remove the meat from the foil, wipe off some of the herbs. Heat vegetable oil in a heavy, ovenproof pan, fry the pieces of meat on all sides for 2 - 3 minutes. Add a piece of butter and place the pan in the oven.

Cook lamb loins in the oven

Place the pan with the fried lamb loins in the preheated oven for 10-15 minutes. After 10 minutes, the meat is still quite pink inside, after 15 minutes it is tender pink everywhere, but no longer bloody.

Serve lamb loins

Remove from the oven, cut into slices with a sharp knife, sprinkle with some pepper and Fleur de Sel and serve immediately.
