Description

This pinsa-calzone with vegetable filling is a hearty dish that is ideal as a main course or snack. The filling of mushrooms, cherry tomatoes and artichoke hearts is refined with ricotta and oregano. Preparation with the Thermomix® simplifies the preparation of the filling. The calzone is vegetarian and offers a Mediterranean variety of flavors. The preparation time is about 60 minutes and yields 2 servings.

Ingredients (10 ingredients)

  • 150 g Mushrooms
  • 200 g Cherry tomatoes
  • 280 ml Artichoke hearts (jar)
  • 2 Stiele Oregano
  • 100 g Ricotta
  • nach Geschmack Coarse sea salt
  • nach Geschmack Pepper
  • 3 EL Olive oil
  • 400 g Pinsa dough
  • Flour for rolling out

Preparation (6 steps)

Prepare mushrooms

Clean and quarter 150 g mushrooms. Wash and halve 200 g cherry tomatoes. Quarter 1 jar (280 ml) artichoke hearts. Wash 2 sprigs of oregano, pluck the leaves and set aside.

Prepare oregano-ricotta

Put the oregano leaves into the mixing bowl and chop for 3 sec./speed 8. Add 100 g ricotta, coarse sea salt and pepper and mix for 10 sec./speed 3. Transfer and set aside.

Fry vegetables

3 min/248°F/Speed 1 120

Put 2 tbsp olive oil in the mixing bowl and heat for 3 min./120°C/speed 1. Add the prepared mushrooms and sauté for 5 min./120°C/Reverse speed/speed 1. Add cherry tomatoes and artichoke hearts and sauté for another 3 min./120°C/Reverse speed/speed 1. Season with salt and pepper. Transfer and let cool.

Prepare pinsa dough

Roll out 1 pack of Pinsa dough (400 g) on a little flour into an oval shape (approx. 20 x 30 cm). Place on a baking sheet lined with baking paper.

Cover calzone

Spread the oregano-ricotta cream in the middle lengthways as an approx. 5 cm wide strip on the dough. Distribute the cooled vegetable filling on the cream. Cut the dough along the long sides about 1.5 cm to the filling. First place short sides over the filling, then fold the cut strips alternately over the filling.

Bake calzone

Brush the calzone with 1 tbsp olive oil and sprinkle with some coarse sea salt. Bake in a preheated oven at 200°C top/bottom heat for approx. 25-30 minutes until golden brown.
