Description

These aubergines stuffed with ham and cheese are a delicious and surprisingly light bite. The aubergine, microwaved to soften it, combines perfectly with the salty flavour of the ham and melted cheese. It is a recipe that I often make when I want something quick and tasty to snack on. Perfect as an appetiser to share or as a light dinner. Frying them in the air fryer makes them crispy on the outside and tender on the inside, a real treat! Also, they are prepared in a short time, which makes them an ideal option for any day of the week.

Ingredients (7 ingredients)

  • 1 piece Aubergine
  • 1 pinch Salt
  • 1 piece Egg
  • 1 puñado Toasted sugar-free corn flakes
  • 4 slice Sliced manchego cheese
  • 4 slice Sliced serrano ham
  • 1 spray Olive oil

Preparation (5 steps)

Preparation of the aubergines

Cut the aubergine into 16 thin discs. Place them in a microwave-safe container, sprinkle with salt and drizzle with spray olive oil. Microwave on full power for 2 minutes.

Crush the corn flakes

Meanwhile, place a couple of handfuls of sugar-free corn flakes in the bowl and crush 5 Sec./Speed 5. Pour the crushed corn flakes into a wide dish.

Coat the aubergines

Whisk the egg in a deep dish. When the aubergine has cooled, coat it in beaten egg and then in the crushed corn flakes, on both sides.

Assembly of the snacks

Place half of the coated aubergine discs in the air fryer basket, covered with baking paper (optional). Place a piece of serrano ham and another of manchego cheese on top of them. Cover each one with another coated aubergine disc, as a lid.

Cook in the air fryer

Program the air fryer to 195 ºC for six minutes. Check the point halfway through the process to confirm the exact time and make sure they are at their cooking point. When they are lightly golden and crispy, remove and serve immediately.
