  • 2.5 cups graham cracker crumbs
  • 0.25 cup white sugar
  • 11 tablespoons unsalted butter, melted
  • 1 cup light brown sugar
  • 0.33333333333333 cup unsalted butter, softened
  • 2 piece large eggs
  • 1 teaspoon vanilla extract
  • 0.25 cup half-and-half
  • 0.5 cup raisins
  • 0.5 cup chopped pecans

Preparation (10 steps)

Prepare the oven and muffin tin

Preheat oven to 375 degrees F (190 degrees C). Spray 12 muffin cups with cooking spray. This step is done outside of the Thermomix.

Combine graham cracker crumbs and sugar

Add 2 ½ cups graham cracker crumbs and ¼ cup white sugar to the Thermomix bowl. Mix for 5 Sec./Stufe 4 to combine.

Add melted butter to crumb mixture

Add 11 tablespoons melted unsalted butter to the Thermomix bowl. Mix for 10 Sec./Stufe 3 until the crumbs are coated.

Press crumb mixture into muffin cups

Press crumb mixture evenly into the bottom and partway up sides of prepared muffin cups. This step is done outside of the Thermomix.

Bake the crust

Bake shells in the preheated oven for 5 minutes. Remove shells from oven and keep oven at 375 degrees F (190 degrees C). This step is done outside of the Thermomix.

Cream butter and brown sugar

Add 1 cup light brown sugar and ⅓ cup softened unsalted butter to the Thermomix bowl. Mix for 2 Min./Stufe 3 until smooth and creamy.

Add eggs and vanilla

Add 2 large eggs, one at a time, to the Thermomix bowl, mixing for 15 Sec./Stufe 3 after each addition. Then add 1 teaspoon vanilla extract and mix for 10 Sec./Stufe 3.

Stir in half-and-half

Add ¼ cup half-and-half to the Thermomix bowl. Mix for 10 Sec./Stufe 2 to combine.

Assemble and bake the tarts

Place a spoonful of raisins and pecans into the bottom of each shell; pour about 1/4 cup sugar mixture into each shell. Bake tarts in the preheated oven until bubbly, about 15 minutes. This step is done outside of the Thermomix.

Cool the tarts

Remove tarts from oven and cool completely on a wire rack, about 15 minutes. This step is done outside of the Thermomix.
