Description

This Mediterranean potato salad from the Thermomix® combines salad potatoes, fennel, olives, feta and date tomatoes into a light meal. Preparation takes about 45 minutes and yields 4 servings. The recipe is vegetarian and is suitable as a side dish or light main course. Ideal for summer cuisine and uncomplicated family meals.

Ingredients (13 ingredients)

  • 500 g Fennel
  • 1 Bund Parsley smooth
  • 2 Stück Garlic cloves
  • 120 g Olive mix without stone
  • 1 kg Salad potatoes
  • 180 g Feta
  • 300 g Date tomatoes
  • 1 Bund Spring onions
  • 0.5 TL Sea salt
  • 0.5 TL Pepper, ground
  • 5 EL Olive oil
  • 3 EL Balsamic vinegar
  • 1 TL Flower honey

Prepare

Wash potatoes, halve unpeeled or cut into bite-sized pieces. Cut off fennel greens and spring onion greens and set aside. Cut fennel and the white of the spring onions into pieces. Halve tomatoes.

Bake potatoes and fennel

Put 4 tbsp olive oil, salt and pepper into the mixing bowl and mix for 5 sec/level 3. Add potatoes, fennel and spring onions and mix with the spatula. Place the mixture on a baking sheet lined with baking paper and bake in a preheated oven at 200 °C for 25 minutes.

Add tomatoes and olives

Mix tomato halves and olives into the potato-fennel mixture on the baking sheet and bake for another 10 minutes until the potatoes are golden brown and cooked.

Prepare dressing

Put garlic in the mixing bowl and chop for 3 sec/level 7. Add remaining olive oil, balsamic vinegar, honey, salt and pepper and mix for 5 sec/level 3.

Complete salad

Place baked vegetables, feta (cubed), fennel greens and spring onion greens in a bowl. Pour the dressing over it and mix carefully. Season with parsley.
