Description

This chicken and merguez couscous is a family-friendly and convivial dish, perfect for large gatherings. I love preparing this dish because it is both flavorful and comforting, especially during the autumn and winter months. The couscous spices and ras el-hanout bring incredible warmth and depth of flavor. The combination of tender chicken and slightly spicy merguez is a real delight. Feel free to adjust the amount of harissa according to your taste for spiciness. A complete and fragrant dish that will delight your guests!

Ingredients (14 ingredients)

  • 500 g fine couscous
  • 12 piece merguez
  • 8 piece chicken drumsticks
  • 5 piece carrots
  • 3 piece turnips
  • 3 piece tomatoes
  • 3 c. à s. couscous spices
  • 3 c. à s. olive oil
  • 2 can tomato paste
  • 2 piece courgettes
  • 2 cube chicken stock cube
  • 2 c. à s. ras el-hanout
  • 1 can chickpeas
  • 1 c. à c. harissa

Preparation of the vegetables

Wash, peel and cut the carrots, turnips and tomatoes into cubes. Set aside.

Browning the chicken

Pour 3 tbsp of olive oil into the Thermomix bowl. Add the chicken drumsticks and brown for 5 Min./Varoma/Stufe 1.

Cooking the broth and vegetables

35 min/212°F/Speed 1 100

Add 1 liter of water, the chicken stock cubes, tomato paste, carrots, turnips, tomatoes, couscous spices, ras el-hanout and harissa. Cook 35 Min./100°C/Stufe 1.

Adding the courgettes and chickpeas

20 min/212°F/Speed 1 100

Wash and cut the courgettes into cubes and drain the chickpeas. Add the courgettes and chickpeas to the Thermomix bowl. Cook 20 Min./100°C/Stufe 1.

Cooking the merguez

Cook the merguez on a grill or in a pan. Then add them to the Thermomix bowl.

Preparation of the semolina

In a large bowl, put the semolina. Add 1 glass of hot water and a drizzle of olive oil. Crumble with your fingers to separate and soak each grain of semolina. Put the semolina in the Varoma.

Steaming the semolina

15 min/Varoma/Speed 1 Varoma

Pour 500 ml of water into the Thermomix bowl. Place the Varoma with the semolina on the bowl and cook 15 Min./Varoma/Stufe 1.

Finalizing the semolina

Once the time is up, put the semolina back in the salad bowl, add salt and butter. Mix the semolina.

Serve

Serve the semolina, around the vegetables and the meat.
