Description
This cheesecake is a classic that can be easily prepared with the Thermomix®. The cake consists of a shortcrust pastry base and a creamy quark filling. Preparation takes about 90 minutes and is suitable for any occasion.

1 Vanilla sugar

750 gr Quark

200 gr Sugar

Preparation (7 steps)
Prepare shortcrust pastry base
For the shortcrust pastry base, prepare the ingredients according to a separate shortcrust pastry recipe and place in a springform pan.
Mix butter and sugar
Add 100g butter and 100g sugar to the mixing bowl and mix for 2 min./speed 3.
Add more ingredients for the dough
Add 1 packet of vanilla sugar and 250g flour and process for 2 min./kneading level into a dough.
Spread dough on shortcrust pastry base
Spread the dough on the prepared shortcrust pastry base.
Prepare quark filling
Separate 4 eggs. Add 750g quark, 1 cup sour cream (or 1 cup cream), 200g sugar and some cornstarch to the mixing bowl. Mix for 3 min./speed 3.

Spread the quark filling on the dough base.
Bake cheesecake
Bake the cheesecake at 160°C for about 1 hour.
