Description

This rice and chickpea salad is a refreshing and nutritious option, perfect for hot days. The combination of rice, chickpeas and fresh vegetables makes it a complete and balanced dish. I often prepare it in summer, because it is very easy to make and can be taken to the beach or a picnic. In addition, it is a very versatile recipe, as you can add the vegetables you like best. Go ahead and try it! You can use brown rice for a healthier option and add a little lemon juice to the dressing to give it a citrus touch.

Ingredients (9 ingredients)

  • 120 gramos rice
  • 150 gramos cooked canned chickpeas
  • 1 piece broccoli
  • 1 puñado nuts to taste
  • 100 gramos lettuce
  • 1 piece carrots
  • 1 pinch salt to taste
  • 1 chorro olive oil
  • 1 pinch chopped parsley to taste

Preparation (4 steps)

Rice cooking

Thermomix® Setting
15 min/212°F/Speed 4 100

Place 120 g of rice in the simmering basket. Pour 1 litre of water into the bowl and place the simmering basket inside. Program 15 Min./100°C/Stufe 4. Once the time is up, remove the simmering basket with the help of the spatula and cool the rice under the tap with cold water. Set aside.

Broccoli preparation

Thermomix® Setting
10 min/Varoma/Speed 1 Varoma

Separate 1 broccoli into small florets. Pour 500 ml of water into the bowl. Place the Varoma container in its position and place the broccoli inside. Program 10 Min./Varoma/Stufe 1. Once the time is up, carefully remove the Varoma and cool the broccoli under the tap with cold water. Set aside.

Grate the carrot

Thermomix® Setting
5 Seg./Speed 5

Peel 1 carrot and cut it into pieces. Introduce the carrot pieces into the bowl and grate 5 Seg./Stufe 5. Remove and set aside.

Mix and dress

In a large bowl, mix the cooked rice, broccoli, grated carrot, 150 g of drained cooked chickpeas, 100 g of chopped lettuce, 1 handful of nuts to taste, salt to taste, a splash of olive oil and chopped parsley to taste. Mix all the ingredients well and serve.
