Description

This seafood paella is a recipe that I have adapted to prepare in the Thermomix®. The combination of scallops and prawns gives it an exquisite flavor and makes it perfect for a special meal. The rice is creamy and full of flavor thanks to the homemade fish stock. It is a dish that always triumphs at home, especially in family celebrations. The preparation is relatively simple, although it requires a little attention so that the rice is just right. Go ahead and try it, you'll love it! Ideal for a festive meal or a special dinner.

Ingredients (11 ingredients)

  • 400 g rice
  • 250 g squid rings
  • 8 piece frozen scallops
  • 8 piece king prawns
  • 1 kg Galician mussels
  • 1.2 l fish stock
  • 1 can crushed tomato
  • 3 cucharadas chorizo pepper pulp
  • Food coloring
  • Extra virgin olive oil
  • Salt

Preparation (10 steps)

Open the mussels steamed

Thermomix® Setting
15 min/Varoma/Speed 1 Varoma

Place 1 kg of Galician mussels in the Varoma container. Fill the bowl with 500 ml of water. Place the Varoma in its position and program 15 Min./Varoma/Stufe 1. Reserve the mussels and the broth.

Prepare ingredients

Thaw 8 frozen scallops and 8 king prawns. Peel the prawns and reserve.

Sear the scallops

Thermomix® Setting
3 min/248°F/Speed 1 120

Add a splash of extra virgin olive oil to the bowl. Program 3 Min./120°C/Stufe 1. Add the scallops and sear for 30 seconds on each side. Remove and reserve.

Sear the squid rings

Thermomix® Setting
5 min/248°F/Speed 1 120

Add 250 g of squid rings to the bowl and program 5 Min./120°C/Stufe 1. Remove and reserve.

Fry the rice

Thermomix® Setting
5 min/248°F/Speed 1 120

Add 400 g of rice to the bowl and program 5 Min./120°C/Stufe 1. Remove and reserve.

Fry the crushed tomato

Thermomix® Setting
8 min/248°F/Speed 1 120

Add 1 can of crushed tomato to the bowl and program 8 Min./120°C/Stufe 1. Add 3 tablespoons of chorizo pepper pulp.

Integrate ingredients and add stock

Add the rice, squid rings and crushed tomato to the bowl. Pour 1.2 liters of hot fish stock into the bowl, in which we will have dissolved food coloring. Add salt to taste.

Paella cooking

Thermomix® Setting
18 min/212°F/Speed 1 100 Reverse

Program 5 Min./100°C/Stufe 1. Then program 13 Min./100°C/Stufe 1/Linkslauf. Do not stir with the spatula, just move the bowl.

Add prawns and scallops

When there are 3 minutes of cooking left, add the prawn tails and scallops that we had reserved to the bowl.

Rest and serve

Let stand for 5 minutes before serving.
