Description

This pasta dish with three tomatoes is a true concentrate of summer flavors! I love preparing this simple and quick recipe, perfect for a sunny lunch or a casual dinner. The fresh fettuccine marry wonderfully with the sweetness of the cherry tomatoes, the intensity of the dried tomatoes and the freshness of the cluster tomatoes. A little garlic and shallots enhance the whole thing. It is a tasty and colorful vegetarian dish, ready in no time. Feel free to add a few fresh basil leaves for even more flavor!

Ingredients (9 ingredients)

  • 500 g fresh fettuccini pasta
  • 2 clove garlic
  • 1 piece shallot
  • 50 g dried tomatoes
  • 200 g cluster tomatoes
  • 250 g cherry tomatoes
  • 30 ml olive oil
  • to taste pepper
  • to taste salt

Preparation (6 steps)

Chopped garlic and shallots

Put 2 cloves of garlic and 1 shallot in the bowl and chop 3 Sek./Stufe 7.

Sauté garlic and shallots

Add 30 ml of olive oil and sauté 3 Min./120°C/Stufe 1.

Add the tomatoes

5 min/212°F/Speed 1/Linkslauf 100 Reverse

Add 250g of cherry tomatoes cut in half, 200g of cluster tomatoes cut into pieces and 50g of dried tomatoes. Cook 5 Min./100°C/Stufe 1/Linkslauf.

Cook the pasta

Meanwhile, cook 500g of fresh fettuccini pasta in salted water according to the instructions on the package. Drain the pasta.

Mix the pasta and sauce

Thermomix® Setting
20 sec/Speed 1/Linkslauf Reverse

Pour the drained pasta into the bowl with the tomato sauce. Mix gently 20 Sek./Stufe 1/Linkslauf.

Adjust pepper and salt to your taste. Serve immediately.
