About this recipe

This noodle casserole with gyros and Metaxa sauce is a dish that our family always enjoys. I got it a few years ago from a friend who has Greek roots. She told me at the time that it is not a traditional Greek dish, but it wonderfully captures the flavors of Greece. Since then, I have refined it again and again and adapted it to our preferences. The ingredients all play an important role in the taste and texture of the casserole. The gyros meat provides the hearty, spicy note and a pleasant consistency. The peppers and onions add sweetness and spice, while the mushrooms contribute an earthy note and a slightly meaty texture. The Metaxa sauce is the heart of the casserole. It combines the creaminess of sour cream and cream with the unique aroma of Metaxa, which gives the dish a slightly sweet and spicy note. The cheese provides a golden brown crust and an extra taste kick. When preparing in the Thermomix®, it is important to add the ingredients in the correct order. First, chop the vegetables, then sauté them. This is the best way to develop the aromas. When stirring the sauce, make sure that the temperature is not too high so that the sour cream does not curdle. If you like it a little spicier, you can add a pinch of chili powder or some finely chopped pepperoni. The casserole can be varied wonderfully. For a vegetarian version, you can replace the gyros meat with halloumi or smoked tofu. Instead of mushrooms, you can also use zucchini or eggplants. There are no limits to your imagination when it comes to spices. Oregano, thyme or rosemary go perfectly with this dish. The casserole is best served warm, straight from the oven. A fresh salad with a light vinegar-oil dressing goes well with it. If you like, you can also serve some tzatziki or yogurt dip with it. A glass of chilled white wine or a cold beer rounds off the dish perfectly. The casserole can be prepared well in advance. You can prepare it the day before and then store it in the refrigerator. Before baking, it should stand at room temperature for about 30 minutes so that it cooks evenly. Leftovers can be stored in the refrigerator and reheated the next day. They taste almost even better when the flavors have properly infused.
