Description

This layered eggplant ground meat casserole is a Mediterranean dream! I especially like to make it in the summer when the tomatoes are nice and ripe. The eggplants are fried golden brown and layered in a casserole dish with a spicy ground meat sauce, creamy mozzarella and Parmesan. The dish is not only incredibly delicious, but can also be prepared well in advance. Perfect for a relaxed dinner with friends or family. A hint of oregano rounds the whole thing off wonderfully. Try it out, you will be thrilled!

Ingredients (15 ingredients)

  • 800 g Eggplants
  • to taste Salt
  • to taste Pepper
  • to taste Sugar
  • 1000 g ripe Tomatoes
  • 0.5 bunch Oregano
  • 1 piece large Onion
  • 1 clove Garlic clove
  • 1 slice Toast bread
  • 5 tbsp Oil
  • Oil
  • 500 g mixed Ground meat
  • 1 tbsp Tomato paste
  • 1 tbsp Balsamic vinegar
  • 225 g Mozzarella

Preparation (8 steps)

Prepare eggplants

Clean and wash eggplants and cut into approx. 1/2 cm thick slices. Sprinkle with salt and let sit for approx. 30 minutes. Do NOT perform this step in the Thermomix.

Prepare tomatoes, oregano, onion and garlic

Wash tomatoes and cut into small cubes. Wash and chop oregano. Peel and quarter onion. Peel garlic. Do NOT perform this step in the Thermomix.

Crumble toast

Thermomix® Setting
5 sec/Speed 8

Place toast in the mixing bowl and chop for 5 sec./speed 8. Transfer.

Roast toast crumbs

Roast toast crumbs in a pan in 1 tbsp hot oil until golden brown and remove. Do NOT perform this step in the Thermomix.

Fry ground meat

Heat 1 tbsp oil in a pan and fry ground meat in it until crumbly. Briefly sauté onion and garlic. Season generously with salt and pepper. Briefly sauté tomato paste. Stir in tomatoes and oregano. Simmer everything covered for approx. 20 minutes. Stir occasionally. Season with salt, pepper, sugar and vinegar. Do NOT perform this step in the Thermomix.

Pat eggplants dry and fry

In the meantime, pat eggplants dry well. Heat 3-5 tbsp oil in portions in a coated pan and fry the eggplants in it until golden brown. Cut mozzarella into thin slices. Grate Parmesan. Do NOT perform this step in the Thermomix.

Layer casserole

Place approx. 1/3 sauce in an oiled casserole dish. Sprinkle with some Parmesan and top with approx. 1/3 of the mozzarella. Spread 1/3 of the eggplants on top. Layer remaining ingredients, finishing with sauce, Parmesan and mozzarella. Sprinkle with toast crumbs. Do NOT perform this step in the Thermomix.

Bake casserole

Bake casserole in a preheated oven (electric oven: 200 °C/ convection oven: 175 °C/gas: level 3) for 35-40 minutes until golden brown. Serve with ciabatta. Do NOT perform this step in the Thermomix.
