Description

These stuffed zucchini boats are a light and delicious dish that is perfect for summer. The zucchini are filled with a spicy chicken and tomato filling and topped with cheese. An absolute highlight when you need something quick and still want something hearty on the table. I like to make them when I still have zucchini in the fridge that need to be used. Garnished with fresh basil, they are a real eye-catcher and taste simply delicious. Ideal as a light lunch or dinner.

Ingredients (10 ingredients)

  • 1 piece Onion
  • 180 g Chicken breast fillet
  • 1 tsp Olive oil
  • to taste Salt
  • to taste Pepper
  • 150 g Tomato sauce
  • 70 g Grated parmesan
  • 3 piece Small zucchini
  • 30 g Grated mozzarella
  • Basil

Preparation (8 steps)

Chop onion

Thermomix® Setting

Put 1 onion into the mixing bowl and chop for 3 sec./speed 5. If necessary, push down with the spatula.

Fry chicken

Cut 1 chicken breast fillet (approx. 180 g) into cubes. Heat 1 tsp of olive oil in a pan and fry the chicken for about 5 minutes. Season with salt and pepper.

Sauté onions

Add the chopped onion from the mixing bowl to the fried chicken in the pan and sauté briefly.

Add tomato sauce and parmesan

Add 150 g tomato sauce and 70 g grated parmesan to the chicken in the pan and bring to a boil briefly.

Prepare zucchini

Halve 3 small zucchini lengthwise, hollow out slightly and place in a baking dish with the cut side facing up.

Fill zucchini

Fill the zucchini halves with the chicken mixture and top with 30 g grated mozzarella.

Bake zucchini

Bake the filled zucchini in a preheated oven at 180°C for approx. 20 minutes.

Garnish and serve

Garnish the baked zucchini with fresh basil and serve.
