Description

This hearty chicken stew with potatoes and beans is a substantial main course that is easy to prepare with the Thermomix®. The recipe is ideal for the cold season and offers a warming meal for the whole family. With a preparation time of about 50 minutes and a portion size of 4 people, this stew is an affordable and filling option. The combination of chicken, vegetables and beans makes the stew a balanced meal.

  • 250 g Onions
  • 2 Stück Garlic cloves
  • 4 EL Olive oil
  • 200 g Carrots
  • 200 g Celery
  • 500 g Potatoes
  • 2 EL Tomato paste
  • 1 TL Mustard
  • 1 TL Paprika powder, mild
  • 0.5 TL Cumin, ground
  • 0.5 TL Marjoram, dried
  • 1 Stück Bay leaf
  • 500 ml Vegetable broth
  • 200 ml Sieved tomatoes
  • 500 g Chicken breast fillet
  • 400 g Kidney beans (drained weight)

Prepare onions and garlic

Add 250 g onions to the mixing bowl and chop for 3 sec./speed 5. Add 2 garlic cloves and chop for 3 sec./speed 7. If necessary, scrape down the sides with the spatula.

Sauté onions and garlic

Add 4 tbsp olive oil to the onions and garlic in the mixing bowl and sauté for 3 min./120°C/speed 1.

Prepare vegetables

Clean, peel and cut 200 g carrots and 200 g celery into coarse pieces. Then add to the mixing bowl and chop for 4 sec./speed 5. If necessary, scrape down the sides with the spatula.

Sauté vegetables

5 min/248°F/Speed 1 248°F

Leave the chopped vegetables in the mixing bowl and add 500 g potatoes, peeled and diced. Add 2 tbsp tomato paste, 1 tsp mustard, 1 tsp paprika powder, mild, 1/2 tsp cumin, ground, 1/2 tsp marjoram, dried, and 1 bay leaf. Sauté for 5 min./120°C/speed 1.

Deglaze with broth and simmer

20 min/212°F/Speed 1 212°F Reverse

Add 500 ml vegetable broth and 200 ml sieved tomatoes to the mixing bowl. Season with salt and pepper. Simmer for 20 min./100°C/speed 1 reverse.

Fry the chicken

Cut 500 g chicken breast fillet into bite-sized pieces. Fry in a separate pan with some oil until cooked through.

Add chicken and beans

5 min/212°F/Speed 1 212°F Reverse

Add the fried chicken breast fillet and 400 g kidney beans (drained weight) to the mixing bowl. Simmer for another 5 min./100°C/speed 1 reverse.

Season and serve

Season the chicken stew with salt, pepper and possibly other spices. Remove the bay leaf. Serve the stew.
