This dessert is child's play! I discovered this Tagada strawberry mousse recipe a few years ago, and it's always a sensation. The whipped cream provides incredible lightness, while the Tagada strawberries melt to create a sweet and tangy flavor. It's perfect for a quick dessert after a meal or for a delicious snack. The preparation is so simple that you can even do it with children. A real fruity and regressive delight!

Preparation of the strawberries

Put the 10 Tagada strawberries in the Thermomix bowl and chop. Scrape the sides of the bowl with the spatula.

Mixing the cream and strawberries

Add the 250 ml of single cream to the bowl with the chopped strawberries.

Pour the preparation into a kitchen siphon. Put the gas cartridge according to the instructions of the siphon. Shake the siphon vigorously.

Airy Tagada strawberry mousse is a bit like my madeleine de Proust. I still remember the first time I tasted a similar version, prepared by a friend during a summer picnic. The idea of transforming these childhood sweets into a sophisticated dessert immediately seduced me. I then adapted the recipe for the Thermomix®, in order to simplify the preparation and obtain a perfect texture. The ingredients are simple, but each plays a crucial role. The single cream, with its high fat content, is essential for obtaining a light and creamy mousse. It provides the necessary body and structure. The Tagada strawberries, for their part, are the heart of the recipe. They offer a unique flavor, both sweet and slightly tangy, which recalls childhood snacks. Their bright pink color also gives a visually attractive appearance to the dessert. The preparation with the Thermomix® is child's play. It is important to chop the Tagada strawberries well at the beginning, so that they mix evenly with the cream. Do not hesitate to scrape the sides of the bowl with the spatula to ensure that there are no pieces left. When mixing the cream and strawberries, carefully monitor the consistency. You must obtain a light and airy mousse, but be careful not to mix too much, at the risk of turning the cream into butter. The mixing time may vary depending on the temperature of the cream and the power of the Thermomix®. For a vegetarian version, it is possible to replace the Tagada strawberries with a vegan strawberry jelly, adjusting the amount of sugar to taste. You can also add a touch of originality by incorporating a few drops of vanilla or orange blossom extract into the preparation. A pinch of crushed pink peppercorns can also enhance the flavors and bring a surprising note. Tagada strawberry mousse is best enjoyed fresh, immediately after preparation. It can be served in individual verrines, decorated with a few fresh strawberries cut into pieces or a few meringue chips. It goes perfectly with dry biscuits, madeleines or cat tongues. For a more festive presentation, it can be coated with a red fruit coulis or sprinkled with icing sugar. Tagada strawberry mousse is difficult to preserve, as it tends to fall over time. It is therefore best to prepare it just before serving. However, it is possible to prepare the base (cream and chopped strawberries) in advance and store it in the refrigerator. It will then suffice to mix it in the Thermomix® and siphon it when serving.
