Description

These cauliflower meatballs are a tasty and light alternative to classic meat meatballs. I often prepare them when I want a vegetarian dish that is tasty and easy to make. Cauliflower, with its delicate flavor, goes perfectly with grated cheese and eggs, creating a soft and flavorful mixture. Baking makes them crispy on the outside and soft on the inside, without the need for frying. Perfect as an appetizer or main course, they will appeal to the whole family! Ideal for a quick and healthy dinner.

Ingredients (8 ingredients)

  • 500 g cauliflower
  • 2 piece eggs
  • 50 g grated cheese
  • 150 g flour
  • 150 g breadcrumbs
  • 1 q.b. pepper
  • 1 q.b. fine salt
  • 1 in spray extra virgin olive oil

Preparation (8 steps)

Cauliflower in the bowl

Thermomix® Setting

Divide the cauliflower into florets and put it in the bowl. Add salted boiling water until it covers the cauliflower.

Drain and mash the cauliflower

Drain the cooked cauliflower well and put it in a bowl. Mash the cauliflower with a fork until you get a coarse puree.

Add eggs and cheese

Add the eggs and grated cheese to the mashed cauliflower in the bowl. Mix well with a fork.

Add flour, salt and pepper

Add the flour, fine salt and pepper to taste to the mixture in the bowl. Mix with a fork to combine the ingredients.

Add breadcrumbs

Add the breadcrumbs a little at a time to the mixture, mixing until you get a homogeneous and workable dough.

Shape the meatballs

Shape the meatballs with your hands, flattening them slightly, and pass them in the breadcrumbs to bread them.

Cooking in air fryer

Put the meatballs in the air fryer basket covered with baking paper. Season with a little spray of extra virgin olive oil (or with a drizzle of oil) and cook for 10 minutes at 190 °C. Do not use the Thermomix for this step.

Turn the meatballs

Halfway through cooking, turn the meatballs with a fork to ensure even browning. Do not use the Thermomix for this step.
