Description

This recipe for game liver dumplings in strong broth is a hearty dish that is especially warming in the cold season. I like to make it when I get game from the hunter. The dumplings are nice and spicy thanks to the wild boar liver, marjoram and nutmeg. Preparation with the Thermomix® is super easy and always succeeds. The dumplings go perfectly in a clear game broth and are a great main course or a hearty appetizer. A real treat for lovers of traditional cuisine!

Ingredients (13 ingredients)

  • 350 Gramm Wild boar liver
  • 280 Gramm stale bread rolls
  • 1 cup Breadcrumbs
  • 1 Bündel Chives
  • 1 Pepperoni
  • 1 Organic lemon
  • 0.5 Red onion
  • 2 Eggs
  • 1 Teelöffel medium-hot Mustard
  • 1 Nutmeg
  • 1 Esslöffel Marjoram
  • 2 Bay leaves
  • 1 Salt and Pepper

Preparation (5 steps)

Chop and sauté onion

Peel, quarter half the red onion and place in the mixing bowl. Chop 3 sec./speed 5. Push down with the spatula. Add a dash of oil and sauté 3 min./120°C/speed 1. Then transfer to a bowl and allow to cool completely.

Chop liver and bread rolls

Clean the wild boar liver, cut into rough pieces and place in the mixing bowl. Chop 10 sec./speed 6. Soak the stale bread rolls in water for ten minutes, then squeeze out carefully and place in the mixing bowl. Chop 10 sec./speed 5. Mix with the liver and transfer to a bowl.

Prepare forcemeat

Add the cooled onion cubes, marjoram, a pinch of freshly grated nutmeg, a level tablespoon of lemon zest, about two tablespoons of finely chopped chives, a teaspoon of mustard, two eggs, a level tablespoon of finely chopped pepperoni, as well as salt and pepper to the liver-bread mixture in the bowl. Mix everything well until a soft but formable mass is created. If necessary, add some breadcrumbs to thicken the mixture.

Shape and cook dumplings

Bring salted water to a boil in a large saucepan, add bay leaves. With wet hands, shape eight even dumplings and place in the water that is no longer boiling. Place the dumplings in the steaming basket and hang it in the mixing bowl. Add 500 ml of water to the mixing bowl. Cook 10 min./Varoma/speed 1.

Remove the dumplings from the steaming basket and place in a clear, strong game broth and serve.

About this recipe

For me, game liver dumplings are a piece of childhood. My grandma, who was born in Bavaria, always prepared them for special occasions, mostly when my grandpa had successfully gone hunting. I still remember the scent of marjoram and nutmeg that wafted through the house to this day. This recipe is my homage to her culinary skills, adapted to the modern kitchen technology of the Thermomix®. The wild boar liver is of course the star of this dish. It gives the dumplings their characteristic, slightly tart taste. Make sure to use fresh liver of good quality. The stale bread rolls serve as a base and give the dumplings their loose texture. They should be really well soaked and squeezed out so that the dumplings don't become too firm. The breadcrumbs act as a binding agent and help to hold the mixture together. The Thermomix® makes preparation incredibly easy. Chopping the onion, liver and bread rolls is quick and even. Sautéing the onion in the mixing bowl saves time and ensures an intense aroma. It is important to allow the onion to cool completely after sautéing before adding it to the remaining ingredients, otherwise the eggs could curdle. When shaping the dumplings, it helps to moisten your hands with cold water. This prevents the mixture from sticking so much. The cooking time in the Varoma can vary depending on the size of the dumplings. It is best to do a cooking test by cutting open a dumpling and checking whether it is cooked through. For a vegetarian version, you can replace the liver with mushrooms or smoked tofu. Chopped walnuts or hazelnuts provide additional bite. Instead of marjoram, you can also use other herbs such as thyme or rosemary. A pinch of caraway seeds also goes well with game dishes. If you like it spicier, you can replace the pepperoni with a chilli pepper or add some cayenne pepper. Serve the game liver dumplings in a clear, strong game broth. Cranberries or a dollop of crème fraîche go well with this. I recommend red cabbage or Brussels sprouts as a side dish. A fresh salad rounds off the dish. You can prepare the raw dumplings well and keep them in the refrigerator. Cooked dumplings can be easily frozen. To warm them up, you can either let them steep in the broth or heat them up in the microwave.
