Description

Ingredients (9 ingredients)

1 tsp lemon juice

0.25 cup amaretto liqueur

1 cup heavy whipping cream

226.8 g mascarpone cheese

1 cup crushed amaretti

4 piece whole amaretti cookies
Preparation (4 steps)
Prepare Raspberry Sauce
Reserve 6 raspberries for garnish. Place remaining raspberries in the mixing bowl. Add 2 tablespoons of sugar, 1 tablespoon of water, and 1 teaspoon of lemon juice. Cook for 7 Min./90°C/Stufe 1. Drain through a fine mesh sieve set over a bowl to remove seeds and reserve raspberry sauce.
Whip Cream and Mascarpone
Add ¼ cup of amaretto liqueur, 1 cup of heavy whipping cream, and the remaining 1 tablespoon of sugar to the mixing bowl. Insert the butterfly whisk. Whip for 3 Min./Stufe 3.5 until soft peaks form. Remove the butterfly whisk. Add 1 (8 ounce) container of mascarpone cheese and blend for 20 Sek./Stufe 3.
Final Blend
Blend the mixture for 20 Sek./Stufe 3 to ensure it is thoroughly combined.
Assemble Parfaits
Place 1 or 2 tablespoons of crushed amaretti in the bottom of a serving glass. Add whipped mascarpone mixture and a layer of raspberry sauce. Repeat layers and top with 1 reserved raspberry and 1 whole amaretti cookie. Repeat with remaining ingredients.
