Description

This apple puree slice is a poem! The fluffy sponge base, super easy to prepare thanks to Thermomix®, is crowned with a creamy curd cheese-apple puree filling. The ladyfingers give the whole thing an additional, slightly crunchy touch. The apple puree, best homemade, provides a fruity sweetness that harmonizes perfectly with the tart freshness of the curd cheese. Qimiq Vanilla makes the cream extra light and airy. The slice is not too sweet and wonderfully juicy - ideal for afternoon coffee or as a dessert after a light meal. It is perfect for those who love fruity cakes and like it uncomplicated. Even baking beginners will enjoy this recipe!

Ingredients (16 ingredients)

  • 5 piece Egg yolks
  • 120 g Powdered sugar
  • 1 tsp Vanilla sugar
  • 0.125 l Neutral cooking oil
  • 0.125 l Lukewarm water
  • 200 g Flour
  • 1 tsp Baking powder
  • 5 piece Egg whites
  • 1 pinch Salt
  • 120 g Fine granulated sugar
  • Ladyfingers
  • 500 g Curd cheese
  • 400 g Apple puree
  • 3 tbsp Powdered sugar
  • 2 Packungen Qimiq Vanilla
  • 500 ml Whipped cream

Beat egg whites until stiff

Thermomix® Setting

Add 5 egg whites and 1 pinch of salt to the mixing bowl. Insert butterfly and beat stiff for 3 min./speed 3.5. Let 120 g fine granulated sugar trickle in. Remove butterfly.

Stir egg yolks and water until foamy

Thermomix® Setting

Add 5 egg yolks and 1/8 l lukewarm water to the mixing bowl and stir until foamy for 3 min./speed 4.

Stir in oil, powdered sugar and vanilla sugar

Slowly pour in 1/8 l neutral cooking oil. Add 120 g powdered sugar and 1 teaspoon vanilla sugar and stir in for 1 min./speed 3.

Mix and fold in flour and baking powder

Mix 200 g flour and 1 teaspoon baking powder and fold in together with the egg white into the yolk mixture.

Bake dough

Pour dough onto a baking sheet or into a baking frame and bake in a preheated oven at 180°C for approx. 25 minutes.

Beat whipped cream until stiff

Add 500 ml whipped cream to the mixing bowl. Insert butterfly and beat stiff for 2-3 min./speed 3.5. Remove butterfly and transfer whipped cream.

Stir Qimiq Vanilla and apple puree

Add 2 packs Qimiq Vanilla and 5 tablespoons apple puree to the mixing bowl and stir for 20 sec./speed 3.

Fold in curd cheese, powdered sugar and whipped cream

Add 500 g curd cheese and 3 tablespoons powdered sugar and stir for 30 sec./speed 3. Fold in whipped cream.

Finish apple puree slice

Spread apple puree on the cooled dough, spread 1/2 of the cream on the apple puree and cover with ladyfingers. Spread apple puree on the ladyfingers and spread the remaining cream on top. Finally, cover again with ladyfingers.

About this recipe

This apple puree slice is a recipe that has been passed down in my family for generations. My grandma always baked it for birthdays, and the scent of apple and sponge cake immediately awakens childhood memories in me. She prepared it without Thermomix®, but I adapted the recipe to simplify and speed up the preparation. The ingredients are deliberately kept simple, but each one plays an important role. The egg yolks provide the golden yellow color and juiciness of the sponge base, while the egg whites, beaten until stiff, make it nice and airy. The oil keeps the base moist, and the lukewarm water helps to optimally combine the ingredients. The apple puree, ideally homemade from seasonal apples, brings a fruity sweetness and a slight acidity to the slice. The curd cheese provides a creamy texture and a pleasant freshness that harmonizes perfectly with the sweet apple puree. Qimiq Vanilla makes the cream particularly light and airy without making it too heavy. The ladyfingers give the slice an additional, slightly crunchy bite and soak up the apple puree over time, making it particularly juicy. When preparing it in the Thermomix®, it is important to separate the eggs correctly so that the egg white becomes nice and stiff. Make sure that the mixing bowl is clean and free of grease. When folding the egg white and flour mixture into the yolk mixture, you should proceed carefully to preserve the airiness of the dough. The dough should not be baked for too long, otherwise it will become dry. The baking time may vary depending on the oven, so you should check the dough with a wooden skewer after about 20 minutes. For the cream, it is important that the whipped cream is really stiff so that the cream retains its shape. The recipe is already suitable for a vegetarian version. For a vegan version, the eggs would have to be replaced with an egg substitute (e.g. apple puree or flaxseed egg) and vegan curd cheese and whipped cream would have to be used. Instead of Qimiq Vanilla, you can also use a vegan vanilla cream. You can also refine the apple puree with other spices such as cinnamon, cloves or cardamom. The apple puree slice tastes best when it is well chilled. It goes perfectly with a cup of coffee or tea. You can also serve it with a dollop of whipped cream or a scoop of vanilla ice cream. The apple puree slice can be stored in the refrigerator for up to 3 days. It can also be prepared well in advance. The sponge base can be baked the day before. However, the cream should only be prepared shortly before serving, as it will otherwise lose its firmness.
