Description

This apple pie with cinnamon crumble topping is an absolute classic and tastes simply heavenly! I especially like to make it in the fall when the apples are fresh from the tree. The dough is quickly prepared in the Thermomix® and the crumble gives the cake that certain something. A perfect cake for Sunday coffee or a cozy afternoon with friends and family. The cinnamon gives the cake a wonderfully warm note. It is easy to bake and is guaranteed to succeed!

Ingredients (7 ingredients)

  • 300 g Flour
  • 180 g Butter - cold
  • 150 g Sugar
  • 1 pinch Salt
  • 8 piece Apples
  • 1 tbsp Lemon juice
  • 1 tsp Cinnamon

Preheat oven and prepare springform pan

Preheat the oven to 180 degrees top and bottom heat. Line the bottom of a springform pan (Ø 24 or 26 cm) with baking paper and grease the edge with butter.

Prepare dough

Thermomix® Setting

Put 300g flour, 180g cold butter in pieces, 150g sugar and 1 pinch of salt into the mixing bowl and process for 2 min./kneading stage to a crumble dough.

Divide dough and form base

Put half of the dough into the prepared springform pan and form a base and a small rim with your hands. Put the remaining dough in the refrigerator.

Pre-bake base

Pre-bake the base for 7 min. in the preheated oven. The dough should not turn brown.

Prepare apples

Meanwhile, peel, core and cut the 8 apples into small pieces. Mix with 1 tbsp lemon juice and 1 tsp cinnamon and spread on the pre-baked cake base.

Form and spread crumble

Take the remaining dough out of the refrigerator, form into crumble and spread on the apples.

Bake cake

Bake the cake for 60 minutes. If it gets too brown, cover it with aluminum foil. Let the cake cool completely before removing it from the pan.

It is important that the butter is really cold so that the crumble succeeds. I always cut it into small pieces before putting it in the mixing bowl. When kneading the dough, it is important to keep an eye on the time. The dough should not be kneaded for too long, otherwise it will become tough. After the 2 minutes of kneading, it should have the consistency of coarse crumble. If the dough is too dry, you can add a tablespoon of cold water. If it is too moist, add some flour. Pre-baking the base prevents it from softening due to the moist apples. The baking time may vary depending on the oven. If the cake becomes too brown, you can cover it with aluminum foil. The recipe is already suitable for a vegetarian version. If you want to prepare the cake vegan, you can replace the butter with vegan butter or margarine. Instead of sugar, you can also use maple syrup or agave syrup, but you should adjust the amount of liquid accordingly. Instead of cinnamon, you can also use other spices such as cardamom, nutmeg or cloves. The type of apple can also be varied. Pears or plums are also a delicious alternative.
