Description

This apple pie with dough lattice, prepared in the Thermomix®, is a classic cake delight with apples, flour, margarine and sugar. The recipe makes 12 servings and is ready in 90 minutes. Ideal as a dessert or cake for the whole family, especially in winter. Preparation in the Thermomix® facilitates dough making and saves time.

Ingredients (12 ingredients)

  • 325 g Flour
  • 175 g Margarine
  • 100 g Sugar
  • 25 g Sugar
  • 1 packet Vanilla sugar
  • 1 piece Egg (size M)
  • 1 kg Apples (gross weight before peeling)
  • 1 tbsp Lemon juice
  • 1 tsp Cinnamon
  • 3 tbsp Cornstarch
  • 1 bis 2 EL Milk
  • 1 tbsp Powdered sugar

Preparation (7 steps)

Prepare dough

Thermomix® Setting
2 min/Kneading speed, 30 sec/Kneading speed

Put 325 g flour, 175 g margarine in small pieces, 100 g sugar, 1 packet of vanilla sugar and 1 egg into the mixing bowl. Knead for 2 min./kneading stage to form a smooth dough. Divide the dough into three portions, put two portions back into the mixing bowl and knead for 30 sec./kneading stage.

Prepare springform pan and fill with dough

Line a springform pan (approx. 26 cm diameter) with baking paper or grease it, also grease the rim. Roll out the larger portion of dough on a lightly floured work surface and press it into the springform pan, forming an approx. 3 cm high rim. Prick the base several times with a fork. Chill the mould until ready to use.

Prepare apples

Peel 1 kg of apples and coarsely grate them, do not grate the core. Place the grated apples in a bowl.

Prepare apple filling

Mix the grated apples with 1 tbsp lemon juice, 1 tsp cinnamon, 3 tbsp cornstarch and 25 g sugar in the bowl. If you like, you can also mix 50 g of raisins into the apples.

Fill in apple filling

Spread the apple filling on the dough base in the springform pan. Press down the edge of the dough all around if it is too high above the filling.

Create dough lattice

Roll out the smaller portion of dough. Use a cookie cutter to cut out stars, hearts or other shapes from the dough and place them slightly overlapping as a "lid" on the apples. Brush the dough with 1-2 tbsp milk.

Bake cake

Preheat the oven to 180 °C (convection: 160 °C). Bake the cake in the preheated oven for approx. 45 minutes. After baking, let it cool and sprinkle with 1 tbsp powdered sugar.

Apple pie with dough lattice – a classic that evokes memories. We often had it at home, especially in the fall when the apples from our own garden were ripe. My grandma had a similar recipe, but without a Thermomix®. She always kneaded the dough by hand, which of course took much longer. The scent of apples and cinnamon that spreads throughout the house when baking is inextricably linked to security and family time for me. The ingredients are deliberately kept simple. The flour forms the basis for the shortcrust pastry, the margarine ensures the necessary smoothness and the delicate melt. Sugar and vanilla sugar contribute to the sweetness, with the vanilla sugar adding a fine, aromatic note. The egg binds the ingredients and gives the dough stability. For the apples, I recommend a sour variety such as Boskop or Elstar. The lemon juice prevents the apples from turning brown and emphasizes their fresh taste. Cinnamon is the classic spice for apple pie, but you can also experiment with other spices such as cardamom or nutmeg. The cornstarch binds the liquid that escapes from the apples during baking and ensures a juicy filling. The Thermomix® makes preparing the dough much easier. Make sure the margarine is cold so the dough doesn't get too warm. If the dough is too sticky, you can add some more flour. Dividing the dough is important so that the lattice doesn't get too thick later. Preparing the springform pan with baking paper or grease prevents the cake from sticking. A little flour on the work surface helps when rolling out the dough. The apple filling can be varied as desired. Raisins are a classic addition, but chopped nuts or almonds also go well with it. Instead of a dough lattice, you can also cut strips from the dough and place them over the apples in a lattice pattern. Brushing with milk ensures a beautiful, golden brown color. For a vegetarian version, margarine can be replaced with vegan butter. A vegan version is a little more difficult because the egg has an important binding function. Here you can try replacing the egg with applesauce or another vegan alternative. There are no limits to the imagination when it comes to spices. In addition to cinnamon, cardamom and nutmeg, cloves or ginger also go well with apple pie. The apple pie tastes best lukewarm, plain or with a scoop of vanilla ice cream or a dollop of whipped cream. A cup of coffee or tea also goes perfectly with it. The cake can be kept in the refrigerator for 2-3 days. It can also be prepared well in advance. The dough can be prepared the day before and stored in the refrigerator. The apple filling can also be prepared and stored in the refrigerator until baking.
